Gluten Free Mini Air Fryer Cheesecakes

Few desserts feel as timeless and classic as cheesecake. With only a few simple ingredients, this lush and creamy dessert is a crowd pleaser! And while some argue it should be considered a pie...I argue- who cares?!?

In it's most basic form- cheesecake is served on a graham cracker crust and topped with cherry filling. She may seem basic, but the flavor is anything but! Luscious, creamy, rich, and slightly decadent...cheesecake has it all!

Recently, my chiropractor was telling me about the time she bought a spring form pan.  She really wanted to make a cheesecake; but, then she started to read all of the instructions.... You need to wrap the pan in foil- some suggest 3 layers! Then, you need to boil some water. Place the pan inside another pan. Carefully pour the hot water around the cheesecake. Then, bake for an hour or more. Let it cool. Oh, and then it's best to let sit in the fridge for 4+ hours. Let's just say, that spring form pan is still sitting in the box...years later. Baking a cheesecake from scratch can be a lot, even for people who enjoy baking.

Perhaps that is why I have come up with so many no-bake varieties...

But, after reading this post- you'll never make cheesecake another way again!

Apparently, you can even 3-D print a cheesecake- Article. That looks...interesting, but I think I'll stick with making my own!

I haven't tried it yet- but you can also make a full-sized cheesecake in the air fryer!

  • Cream Cheese
  • Sugar
  • Vanilla
  • Lemon
  • Eggs
  • Gluten Free Cookies or Graham Crackers + Melted Butter

 

Can I bake in an air fryer?

You bet! Using an air fryer allows you to bake in less time! You also don't have to spend extra time waiting for the oven to preheat. It's perfect when you only want to make a few. And, on a hot day- you won't need to turn on your oven! You may need to line the basket with foil or parchment. Using the air fryer can affect the finished texture, so don't expect the exact same results. The air fryer may work better for some baked goods, whereas the oven may produce the best results for other items.

What is New York Style Cheesecake?

New York Style cheesecake uses more cream cheese, which leads to a heavier, richer texture. Regular cheesecake uses more cream and/or sour cream to create a thinner batter. The final texture is lighter and creamier. I tend to go for a more New-York-vibe.

Ingredients
  • 8 oz. cream cheese, softened
  • 1/4 c. sugar
  • 1/2 tsp. vanilla
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 Tbsp.)
  • 1 egg
  • 1 egg yolk

Base of Cheesecake

  • 7 cookies
  • OR
  • 1/3 c. gluten free pretzels or graham crackers, crushed
  • 1 Tbsp. butter, melted

Flavor Variations:

Peanut Butter: 2 Tbsp. of peanut butter + 1 Tbsp. of milk/cream

Chocolate: 1/4 c. chocolate chips, melted + 1 Tbsp. milk/cream

Instructions
  • In a large mixing bowl, beat the cream cheese. Next, beat in the sugar, vanilla, lemon zest, and lemon juice. Mixture should be very smooth. Then, beat in the egg and egg yolk.
  • Use foil and/or silicone muffin liners. Place a cookie or the crushed pretzels/graham crackers and melted butter on the bottom.
  • Air fry at 350 degrees for 8-10 minutes. Allow to cool for a few minutes. Then, refrigerate for at least one hour.
  • If desired, melt 1/4 c. of white or chocolate chips and drizzle over the mini cheesecakes.
  • Store in the fridge.
