Gluten Free Mini Air Fryer Cheesecakes

Ingredients

  • 8 oz. cream cheese, softened
  • 1/4 c. sugar
  • 1/2 tsp. vanilla
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 Tbsp.)
  • 1 egg
  • 1 egg yolk

Base of Cheesecake

  • 7 cookies
  • OR
  • 1/3 c. gluten free pretzels or graham crackers, crushed
  • 1 Tbsp. butter, melted

Flavor Variations:

Peanut Butter: 2 Tbsp. of peanut butter + 1 Tbsp. of milk/cream

Chocolate: 1/4 c. chocolate chips, melted + 1 Tbsp. milk/cream

Instructions

  • In a large mixing bowl, beat the cream cheese. Next, beat in the sugar, vanilla, lemon zest, and lemon juice. Mixture should be very smooth. Then, beat in the egg and egg yolk.
  • Use foil and/or silicone muffin liners. Place a cookie or the crushed pretzels/graham crackers and melted butter on the bottom.
  • Air fry at 350 degrees for 8-10 minutes. Allow to cool for a few minutes. Then, refrigerate for at least one hour.
  • If desired, melt 1/4 c. of white or chocolate chips and drizzle over the mini cheesecakes.
  • Store in the fridge.
