Gluten Free Peppermint Cheesecake Brownies

Dark chocolate brownies with a peppermint cheesecake frosting- these gluten free peppermint cheesecake brownies make a fun and festive holiday dessert!

Few things in this world are as wonderful as a pan of gooey, chocolatey brownies! Every few weeks, I crave them badly!

For classic brownies, with a minty holiday twist, try these peppermint cheesecake brownies! They may sound intimidating, but really we’re just topping brownies with a no-bake cheesecake icing. SO GOOD! Oh, and then adding some crushed candy canes.

This recipe creates more of a cake-like brownie. For a fudgier texture, simply omit the baking powder and maybe a little of the flour. For an extra minty flavor, you could also add some peppermint extract to the brownie batter.

  • Brown Sugar
  • Greek Yogurt or Applesauce

  • Dark Cocoa Powder
  • Dark or Semi-Sweet Chocolate Chips
  • Baking Powder
  • Gluten Free Flour Blend
  • Cheesecake Icing
  • Crushed Candy Canes or Hersheys Candy Cane Kisses

 

Cheesecake Frosting

This recipe is a cross between a no-bake cheesecake and frosting. Simply beat ingredients. Then, spread over the cooled brownies. Top with some crushed minty candy and serve!

  • Vanilla
  • Powdered Sugar
  • Optional: peppermint extract

Do you need to refrigerate cheesecake brownies?

Yes, you should keep them in the fridge until ready to share. In general, I prefer to store brownies in the fridge, but especially when there is cream cheese frosting involved!

How to Tell When Brownies are Done

  • For cake-like brownies, they will just begin to pull away from the sides of the pan. An inserted toothpick should come out clean.
  • For fudgy brownies, pay close attention to the baking time recommended. An inserted toothpick should come out with some small crumbles that are moist, but not wet.

Ingredients
  • 2 Tbsp. butter or coconut oil, melted
  • 1/2 c. brown sugar
  • 1/2 c. Greek yogurt or applesauce
  • 1 tsp. vanilla
  • 2 eggs
  • 1/4 c. dark chocolate chips, melted
  • 2 Tbsp. dark cocoa powder
  • 1/4 tsp. salt
  • 1/2 tsp. baking powder
  • 3/4 c. gluten free flour blend

Cheesecake Icing

  • 8 oz. cream cheese, softened
  • 2 Tbsp. milk or cream
  • 1/2 tsp. vanilla
  • 1/4 - 1/3 c. powdered sugar
  • Optional: peppermint extract
  • Topping: 12 candy cane Hershey kisses or 4-6 mini candy canes
Instructions
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, whisk the butter/oil, brown sugar, yogurt/applesauce, vanilla, and eggs. Then, whisk in the melted chocolate chips, cocoa powder, salt, baking powder, and gluten free flour. Pour into a greased 9x9 baking dish. Bake for 18-20 minutes, until an inserted toothpick comes out mostly clean.
  • In a medium mixing bowl, beat the cream cheese until smooth. Next, beat in the milk/cream, vanilla, and powdered sugar. Place in fridge until the brownies are cooled.
  • Cut or crush the Hershey kisses or candy canes. Sprinkle over the cream cheese frosting.
  • Store brownies in the fridge.
