These gluten free Lemon Heavenly Hunks make the perfect, healthy sweet treat! You could stop at your local Costco or Target– but, they are so simple to make at home! Plus, you get to control the flavor and quality of ingredients! I prefer to add cashews, protein powder, and chia seeds for more protein and fiber. Plus, these bars are filled with other wholesome ingredients like old-fashioned oats, honey, and coconut oil. Snacks should help to fuel your day, not weigh you down.

‍If you’ve never heard of Heavenly Hunks- they are basically soft, sweet, hunks of granola. Chewy and gluten free– they are perfect for busy mornings, mid-day slumps, or even on-the-go fuel. And the best part, they are quick and super simple to make at home! This version combines nutty wholegrain oats and cashews with sweet and tangy lemon flavor.

Gluten Free Lemon Granola Bars with White Chocolate Chips

Ingredients in Lemon Heavenly Hunks

  • Cashews
  • Old-Fashioned or Rolled Oats
  • Brown Sugar
  • Lemon Zest & Juice
  • Chia Seeds
  • Protein Powder
  • Coconut Flakes
  • Vanilla
  • Milk
  • Honey
  • Coconut Oil
  • White Chocolate Chips

Steps to Make Homemade Lemon Heavenly Hunks

  1. In a food processor, add the cashews and pulse lightly. Then, add the oats, brown sugar, chia seeds, protein powder, and coconut flakes. Again, pulse together. Next, add the vanilla, honey, milk, coconut oil, and chocolate chips. Start with 3 Tbsp of coconut oil.  Pulse until mixed and mixture feels wet and sticks together when pressed. If needed, add another Tbsp. of coconut oil.
  2. Press oats into a lined 8x8 baking dish, lined with parchment paper. Use fingers and/or the bottom of a measuring cup to press the oats down. Cover and refrigerate for at least one hour. Finally, cut and enjoy! 
  3. Store leftovers in the fridge.

According to the website, “Heavenly Hunks are chewy cookies baked in a uniform square shape to ensure chewiness and flavor—- they’re made to taste good and be good for you.” I would describe them as soft, square, delicious hunks of granola bars. They are gluten free, vegan, and non-GMO.

  • 3 Tbsp. chia seeds
  • 2 scoops of protein powder
  • 1/4 c. coconut flakes
  • Zest of 1 lemon
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • 2 Tbsp. honey
  • 1/4 c. milk
  • 4 Tbsp. coconut oil, melted
  • 1/2 c. white chocolate chips
