Ingredients You’ll Need:

  • Ripe banana: A medium-sized banana will give you the perfect amount of flavor and moisture for the cake.
  • Gluten free flour: The base of the cake, giving it that fluffy, soft texture.
  • Baking Soda: To help the cake rise and become light and airy.
  • Protein powder: A boost of protein for a balanced treat.
  • Maple syrup, honey, or brown sugar:: Adds sweetness and enhances the banana flavor.
  • Milk: Use your choice of milk—dairy or non-dairy works great!
  • Butter or oil: Adds richness and helps keep the cake moist.
  • Vanilla extract: For a hint of warmth and depth of flavor.
  • Egg or egg whites: For added protein and to help bind the ingredients together.
  • Ground cinnamon: Just a dash to add that cozy, spiced note.
  • Pinch of salt: To balance out the sweetness.
  • Optional add-ins: Chocolate chips, walnuts, or even a sprinkle of cinnamon sugar for extra flavor and texture.

How to Make a Gluten Free Banana Bread Mug Cake:

1. Mash the Banana: Start by mashing your ripe banana. The riper the banana, the sweeter and more flavorful it will be, so this is the perfect use for those overripe bananas sitting on your counter. Mash it up in a small bowl until smooth, leaving a few small chunks for texture if you like.

2. Mix the Ingredients: In a medium bowl, combine the mashed banana, gluten free flour, maple syrup, milk, butter (or oil), vanilla extract, baking soda, protein powder, cinnamon, and a pinch of salt. Stir until well combined.

3. Add Optional Mix-ins: If you're feeling adventurous, this is the time to stir in any extra ingredients like chocolate chips, chopped walnuts, or even a spoonful of peanut butter. These additions can elevate your banana bread mug cake and give it that extra bit of flavor and texture.

4. Microwave the Mug Cake: Grease the mug with nonstick spray and pour in the batter. Place your mug in the microwave and cook the cake on high for about 1 minute and 35 seconds. Depending on your microwave's wattage, you may need to adjust the time slightly—if the cake isn’t fully set, microwave for an additional 15-20 seconds. The cake should rise and firm up but remain soft and moist in the center.

5. Let It Cool and Enjoy: After the cake is done cooking, let it cool for a minute or two before digging in. The mug will be hot, so be careful! You can top your banana bread mug cake with a dollop of whipped cream, or even a drizzle of honey or peanut butter for extra indulgence.

Tips for the Perfect Banana Bread Protein Mug Cake:

  • Use a Large Mug: Make sure your mug is large enough to allow the cake to rise without spilling over. A 12-ounce mug is ideal.
  • Watch the Microwave Time: Overcooking the cake will make it dry, so be sure to check it at 1 minute and 35 seconds and adjust as needed.
  • Don’t Skip the Ripeness: The riper the banana, the better the flavor. A fully ripe banana gives this mug cake its signature sweetness.
  • Experiment with Add-ins: Want to mix it up? Add some mini chocolate chips, chopped nuts, or even a handful of oats for a hearty twist on your banana bread mug cake.
  • Single Serving Delight: This recipe is intended to be a single serving. If you need more, simply double the recipe and divide it between two mugs. Cook separately for the best results.
