Lemon Heavenly Hunks

Ingredients
- 1 c. cashews
- 2 c. old-fashioned or rolled oats
- 1/4 c. brown sugar
- 3 Tbsp. chia seeds
- 2 scoops of protein powder
- 1/4 c. coconut flakes
- Zest of 1 lemon
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 2 Tbsp. honey
- 1/4 c. milk
- 4 Tbsp. coconut oil, melted
- 1/2 c. white chocolate chips
Instructions
- In a food processor, add the cashews and pulse lightly. Then, add the oats, brown sugar, chia seeds, protein powder, and coconut flakes. Again, pulse together. Next, add the lemon zest, lemon juice, vanilla, honey, milk, coconut oil, and white chocolate chips. Pulse until mixed and mixture feels wet and sticks together when pressed.
- Press oats into an 8x8 baking dish, lined with parchment paper. Use clean hands and/or the bottom of a measuring cup to press the oats down. Cover and refrigerate for at least one hour. Finally, cut and enjoy!
- Store leftovers in the fridge.
