Keto Peanut Butter Cookie Dough

For a low carb treat- these keto peanut butter cookie dough bites will quickly satisfy that sweet tooth! No baking skills required.

Who can resist a mixing bowl filled with cookie dough? Anyone, anyone?!?

Not me. I always need to give the dough a taste...just to make sure it's ok. I mean...why waste time baking if there's something wrong with the dough....

Luckily, I've never gotten sick, but that's really not the best practice. 

Instead of going through all the work of baking a few dozen cookies, just so I can enjoy a few bites of cookie dough...let's just focus in on the good part! Let's just create a sweet "dough" that is made for eating! We can even add in a few healthier items- nuts, nut butter, remove some of the sugar AND still feel completely, sweetly satisfied! Oh- and it will only take about 5 minutes!

I love making edible cookie dough because it is so easily customizable! You can make it gluten free, high protein, keto-friendly, vegan, lots of calories and fat, kinda healthy, not-so-healthy- the choice is yours!

But, the more you want it to taste like actual cookie dough- stick with flour, butter, and sugar. I like to add nuts and nut butter for flavor and more protein.

And best of all- it's enjoyed straight from the fridge! No need to wait 10 minutes for baking.

Note: if you make the recipe with cashews, as listed, there will be about 4-4.5g of net carbs per ball. For only about 2g of net carbs per serving, replace the cashews with almonds or almond flour.

 

Flavor Variations

  • Nut Butter- peanut, cashew, almond
  • Citrus Zest- orange, lime, lemon
  • Nuts- cashews, almonds, pecans, walnuts, pistachios
  • Flour- almond, coconut, oat, good ol' AP flour, gluten free flour
  • Cinnamon chips, butterscotch, caramel, mint, white chocolate, milk chocolate, dark chocolate
  • Dates, sugar, maple syrup
  • Butter, coconut oil

  • Almond Flour
  • Peanut Butter
  • Vanilla
  • Sugar Free Maple Syrup (I used Lakanto)
  • Coconut Oil
  • Sugar Free Chocolate Chips

Is it safe to eat?

Yes! This recipe does not use any eggs. It is literally designed to be eaten straight from the bowl! Some people may worry about eating raw flour. If so, then I'd stick with oat or almond flour. You can also heat treat the flour by baking it prior to adding to the recipe.

Can I bake this dough?

Theoretically, sure you can bake this dough, but I wouldn't recommend it. Without eggs and a leavening agent, they won't spread or rise. This is best eaten straight from the fridge! No wait time needed!

 

How long does cookie dough last in the fridge?

Store in an airtight container in the fridge for 5-6 days, if it lasts that long...

Ingredients
  • 1 1/2 c. cashews
  • 1/2 c. almond flour
  • 1/2 c. peanut butter
  • 2 Tbsp. sugar free maple syrup
  • 1 tsp. vanilla
  • 2 Tbsp. coconut oil, melted (or butter)
  • 1/4 c. sugar free chocolate chips
Instructions
  • In a food processor, begin to blend the cashews. Next, add the almond flour, peanut butter, sugar free maple syrup, vanilla, and coconut oil. Blend until a smooth dough is formed. You may need to add a bit more liquid, depending upon the final desired consistency. You could add a little more coconut oil, milk/cream, or water.
  • Scrape the dough into a medium bowl. Then, add the chocolate chips and mix. Scoop and roll dough into balls. Store in the fridge.
