Mini Vegan Key Lime Tarts

Cool, creamy, sweet, tart, vegan, and gluten free- these mini vegan key lime tarts have it all!

I'm often asked about my favorite dishes to make. Honestly, mini desserts tend to be the most fun and enjoyable! They're small, sweet, cute...what's not to like?!?  They can easily be sampled without destroying the look of the final dish. And often, one or two is more than enough to satisfy anyone's sweet tooth! Everyone can go back for seconds and no one needs to think twice about the small indulgence.

If you're a people-pleaser, there are some food intolerances and/or preferences in your family, or you just like to try something new- these mini key lime tarts are for you! Since they're vegan and gluten free, you're just about guaranteed to satisfy everyone! I guess there might be those who dislike tarts or maybe even limes... Well ok, we can't please everyone.

Ingredients in Mini Vegan Key Lime Tarts

  • Gluten Free Flour Blend
  • Vegan Butter
  • Powdered Sugar (organic)
  • Vegan Cream Cheese
  • Limes
  • Whipped Topping

 

What are key limes?

Grown in Florida and California, key limes are small with a light yellow color. They are known for being tart and fragrant. Their skin is much thinner, making them last for only a few days. Most notably, they are used for key lime pies. These little babies only produce about 2-3 tsp. of juice.

 

Do I need to use key limes?

Of course not! They tend to be the best; however, I cannot always find them at my local grocery store. Also, they produce much less juice than other limes.

 

How do vegans replace butter in baking?

There are a number of great substitutes for butter. A few include- coconut oil, vegan butter, pureed fruit, vegetable oil, or olive oil.

 

Is vegan baking healthier?

Vegan treats could be healthier, but I would never assume. Oreos are vegan (and delicious!) It always depends on all of the ingredients used and the quantities of each.

Ingredients
  • 1 3/4 c. gluten free flour blend
  • 1/3 c. powdered sugar (vegan-friendly)
  • 7 Tbsp. vegan butter
  • 4 tsp. water

Key Lime Filling

  • 7 oz. vegan cream cheese
  • Juice of 1 1/2 limes (about 3 Tbsp.)
  • 1/4 c. powdered sugar (vegan friendly)
  • 4 - 5 oz. whipped topping
Instructions
  • In a large mixing bowl, stir the flour and powdered sugar. Then, use clean hands, a fork, or a pastry blender to cut in the vegan butter. Add the water. Next, use a spatula to gently press and combine. Cover and refrigerate dough for 20 minutes.
  • Preheat the oven to 350 degrees.
  • Press about 1 Tbsp. of dough to cover the bottom and sides of greased mini muffin wells. Bake for 12-13 minutes. Set aside to cool.
  • In a large mixing bowl, beat the vegan cream cheese until smooth. Then, beat in the lime juice and powdered sugar. Fold in the whipped topping. Spoon or pipe into cooled tart shells. Store in the fridge.
