Keto Peanut Butter Cookie Dough

Ingredients
- 1 1/2 c. cashews
- 1/2 c. almond flour
- 1/2 c. peanut butter
- 2 Tbsp. sugar free maple syrup
- 1 tsp. vanilla
- 2 Tbsp. coconut oil, melted (or butter)
- 1/4 c. sugar free chocolate chips
Instructions
- In a food processor, begin to blend the cashews. Next, add the almond flour, peanut butter, sugar free maple syrup, vanilla, and coconut oil. Blend until a smooth dough is formed. You may need to add a bit more liquid, depending upon the final desired consistency. You could add a little more coconut oil, milk/cream, or water.
- Scrape the dough into a medium bowl. Then, add the chocolate chips and mix. Scoop and roll dough into balls. Store in the fridge.
