Keto Peanut Butter Cookie Dough

Ingredients

  • 1 1/2 c. cashews
  • 1/2 c. almond flour
  • 1/2 c. peanut butter
  • 2 Tbsp. sugar free maple syrup
  • 1 tsp. vanilla
  • 2 Tbsp. coconut oil, melted (or butter)
  • 1/4 c. sugar free chocolate chips

Instructions

  • In a food processor, begin to blend the cashews. Next, add the almond flour, peanut butter, sugar free maple syrup, vanilla, and coconut oil. Blend until a smooth dough is formed. You may need to add a bit more liquid, depending upon the final desired consistency. You could add a little more coconut oil, milk/cream, or water.
  • Scrape the dough into a medium bowl. Then, add the chocolate chips and mix. Scoop and roll dough into balls. Store in the fridge.
