What's better than a plate of fried zucchini?? Well, we could air fry and add some grated sweet potatoes... Ummm...YES!!!
These fritters have quickly become a new favorite! I made Zucchini Fritters a few weeks ago, and these are EVEN BETTER!
A little crispy on the outside, soft on the inside. With thin strips of sweet potato and zucchini, bound together with egg, flour, cheese, and Sriracha. Simple. Flavorful. Loaded with nutrients. And, absolutely delicious!
The hardest part of this recipe is grating the sweet potato. It's a bit of a workout! After that, the rest is smooth sailing!
I kept it pretty simple, but there are a ton of possible flavor options!
Don't have an air fryer??? You could also shallow fry in a skillet.
Zucchini, as well as other vegetables, tend to have a lot of water. After grating, squeeze out as much water as possible. A cheese cloth is the best method, but you can also use a clean kitchen towel and/or paper towels. Placing in a colander and pressing down will also work.
With grated veggies, a bit of cheese, and some Sriracha- these air fryer zucchini & sweet potato fritters make a terrific side dish! Sure to become a family favorite!
