Air Fryer Zucchini & Sweet Potato Fritters
With grated veggies, a bit of cheese, and some Sriracha- these air fryer zucchini & sweet potato fritters make a terrific side dish! Sure to become a family favorite!

Ingredients
- 2 medium zucchinis, grated
- 1 medium sweet potato, grated
- 1/2 c. gluten free flour (I used oat and almond)
- 1/4 c. Parmesan cheese
- 1/2 c. cheese, shredded
- 2 eggs
- 1-3 tsp. Sriracha
- Salt and pepper
- Optional: cream cheese, sour cream, Greek yogurt, and/or scallions
Instructions
- Grate the zucchini. Use a cheese cloth, clean kitchen towel, or paper towels to squeeze out the excess water. Then, pour into a large mixing bowl. Next, add the sweet potato, flour, Parmesan cheese, shredded cheese, eggs, Sriracha, salt, and pepper to the same mixing bowl. Use clean hands or a large spoon to mix well.
- Form into 8-10 patties, To get rid of any excess liquid, form the patties over the sink. Set the air fryer to 350 degrees and spray with cooking spray. Cook 4 at a time for 7-8 minutes. Next, flip and cook for another 5-6 minutes. Remove and set aside. Then, cook the remaining fritters. Top with cream cheese, sour cream, Greek yogurt, and/or scallions.
