Air Fryer Cauliflower Nachos

Ok, the title may not sound very appetizing...but you will be missing out if you never give it a try!

Unless you've been living under a rock, cauliflower is everywhere! It looks like he finally hired a terrific publicist. Pizza, rice, steak, pasta, stuffing... Boiled, mashed, roasted, sautéed...apparently it can replace almost anything!

And you're likely getting tired of it.

And, I get it. But, cauliflower is so freaking versatile! It doesn't have a strong taste, which means it can take on the flavors of other items in the dish. Plus, it adds lots of volume to recipes with fiber, vitamins, Omega-3s, and only 25 calories per cup!

So, if you've never given cauliflower a chance, this is your time. No, really...hear me out. Raw cauliflower dipped in ranch?!?

No, thank you.

Some people may love it, but I'm not a fan of ranch and that's just not enough flavor for me. But, these "nachos" are seriously so good! So much flavor! The cauliflower just gives a slight nutty flavor. A little crispy on the outside and tender on the inside. Then, pile on your favorite nacho or taco fixin's and dinner or a healthy snack is ready.

Ingredients for Air Fryer Cauliflower Nachos

  • Cauliflower
  • Olive Oil
  • Salt & Pepper
  • Bell Pepper
  • Onion
  • Ground Turkey- You could also use ground chicken, beef, or sausage.
  • Taco Seasoning
  • Optional: Diced tomatoes, shredded lettuce, shredded cheese, queso freso, salsa, pico de gallo, black beans, corn, cilantro, scallions, black olives, avocado, sour cream...

Can you melt cheese in an air fryer?

Yes, you can; however, you will have a big mess on your hands! Use the air fryer to roast the cauliflower. Then, remove and add the toppings. If you prefer melted cheese, a few seconds in the microwave or broiler should do the trick. You could sprinkle cheese over something that is still sitting in the air fryer or has just been taken out. Otherwise, I'd stick with the microwave or oven.

Ingredients
  • 1 head of cauliflower, chopped into small florets
  • Olive oil
  • Salt and pepper
  • 1/2 bell pepper, diced
  • 1/2 medium onion, diced
  • 1/2 lb. ground turkey
  • 1/2 packet taco seasoning (or 1/2 Tbsp.)
  • Toppings: Salsa, sour cream, avocado, diced tomatoes, shredded lettuce, cheese, black beans, cilantro, green onions...
Instructions
  1. In a medium mixing bowl, toss the cauliflower with 1 Tbsp. of olive oil, salt, and pepper. Place in a single layer in the air fryer. Then, set to 375 degrees and cook for 10-15 minutes, shaking basket every 3-4 minutes.
  2. In a medium skillet, heat 1/2 Tbsp. of olive oil over medium heat. Sauté the peppers and onion for 4-5 minutes. Next, add the ground turkey and cook until browned. Season with salt and pepper. Then, add the taco seasoning mix (and water, if needed.)
  3. Top cauliflower with the meat/veggie mixture. Next, add your favorite toppings- tomatoes, salsa, beans, cilantro, cheese, etc. Serve and enjoy!
