For a simple, yet flavorful side dish that pairs well with so many things- check out this oven roasted zucchini! Crisp and tender, not soggy!

Zucchini is so versatile! With a mild flavor, it can be added to many dishes. Plus, it's delicious on its own! Air fried with a spray of oil and a little garlic salt is my favorite! But, roasting with a baking rack is a close second. With a high water content, zucchini can be a little tricky to cook. It's easy to end up with a soggy mess. The best methods are sautéing over medium-high heat, air frying, or roasting with a baking rack.

Using just a few simple ingredients, these zucchini spears are roasted to tender perfection! The secret to roasting such large zucchini spears is the baking rack! It will allow air to circulate, which leads to a soft, yet still a bit crisp side dish.

Give it a try- you won't be disappointed!
