Mixed Berry Crisp Baked Oatmeal

With fresh berries and a streusel crumb topping, this mixed berry crisp baked oatmeal will quickly become a new family favorite!

Sometimes I think I've run out of new baked oatmeal ideas. To date, I've come up with over 45 different flavors. And then every once in awhile a new idea just hits me. Bam.

I think this variety will be a fave for many, but I wasn't sure how much I would enjoy it. The texture of some fruits gets to me. I will eat almost any fruit frozen in a smoothie, but the seeds of raspberries and blackberries are not my favorite. Blueberries would be another great addition, but I've also never been a huge fan of them.

But, the fresh fruit added some moisture and extra sweetness. And with a streusel crump topping and vanilla glaze- what's not to like???

Ingredients in Mixed Berry Crisp Baked Oatmeal

  • Butter
  • Applesauce
  • Brown Sugar
  • Maple Syrup
  • Vanilla
  • Eggs
  • Baking Powder
  • Flour
  • Milk (can use dairy free)
  • Old-Fashioned or Rolled Oats
  • Mixed Berries
  • Powdered Sugar
  • Optional: Protein Powder

 

Can I add protein powder to my baked oatmeal?

Absolutely! I usually do. If you’re not going to serve the oatmeal with a protein (eggs, yogurt, etc.) than I would definitely add some protein to help balance the carbs. For a baked version, I only add half of the flour (1/4 cup.)

Baked Oatmeal Tips

  • There are so many possible flavor combinations! Add some chopped pecans, almonds, or white chocolate chips.
  • Adding a bit of oil (coconut or butter) provides some healthy fat. It also means there will be no sticking to paper cupcake liners.
  • Both applesauce AND yogurt work well. Choose your favorite or whatever you find in the pantry/fridge. I use Greek yogurt for some added protein. Non-dairy varieties also work well.
  • Gluten free as long as the oats are certified gluten free and you use gluten free flour. I use oat flour.
  • Serve right out of the oven or make ahead and store in the fridge. Baked oatmeal will last for 4-5 days. I prefer re-heating in the microwave for 30-45 seconds.

Ingredients
  • 2 Tbsp. butter or coconut oil, melted
  • 1/2 c. applesauce
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 c. flour
  • 1/2 tsp. baking powder
  • 1 c. milk (can use dairy free)
  • 2 c. old-fashioned or rolled oats
  • 6 oz. mixed berries (I used raspberries and blackberries)

Crumb Topping

  • 1/3 c. brown sugar
  • 2 Tbsp. flour
  • 2 Tbsp. butter, cold and cubed

Vanilla Drizzle

  • 1 Tbsp. butter, melted
  • 1/3 c. powdered sugar
  • 1 Tbsp. milk or cream
  • 1/2 tsp. vanilla
Instructions
  • Preheat the oven to 350 degrees. In a large mixing bowl, whisk the butter, applesauce, brown sugar, maple syrup, vanilla, eggs, flour, and baking powder. Carefully whisk in the milk. Then, stir in the oats and berries. Next, pour into a greased 9x13 baking dish or 12 lined-muffin cups.
  • In a small bowl, mix the brown sugar and flour. Then, cut in the butter. Sprinkle over the oatmeal. Next, bake for 30 minutes.
  • In a small bowl, whisk the melted butter, powdered sugar, milk/cream, and vanilla until a thick glaze forms. Add a bit more powdered sugar or liquid until desired consistency is reached. Spread or drizzle over the cooled oatmeal.
