Healthy Loaded Totchos

For snack, dinner, or a game-day treat, these healthy loaded totchos (tater tot nachos) are a home run! Crispy tots loaded with your favorite nacho toppings!

Over the years, I've gotten very creative with nachos. I've made Italian Nachos, Air Fryer Roasted Cauliflower Nachos, and even Apple Nachos.

Sadly, I cannot take credit today because some other genius invented totchos first!

If that name seems a little unclear, imagine if tater tots and nachos had a beautiful and delicious baby...

Now, French fries/tots and nachos are not known for being very healthy. Carbs and oil fried together are delicious, but full of calories and fat! Luckily, we can easily make a few healthier adjustments, without losing out on flavor! Let's have our nachos and fries AND eat them too!

Healthier Totchos Tips:

    ♦ Look for tater tots without filler and ingredients you can't pronounce. Alexia is a great brand!

    ♦ Do NOT deep fry the tater tots.

     ♦ Pay attention to the serving size of the tater tots. It's easy to go overboard. Let the meat and veggies fill up the portion sizes.

     ♦ Use a leaner meat, such as ground turkey or chicken.

     ♦ Stay away from a creamy cheese sauce. Or make your own.

     ♦ Load up on sautéed veggies!

     ♦ Salsa adds so much flavor and is very low in calories!

Ingredients in Loaded Totchos

  • Tater Tots
  • Onion
  • Bell Peppers
  • Ground Turkey, Chicken, or Beef
  • Taco Seasoning Mix
  • Toppings: Cheese, Diced Tomatoes, Scallions, Cilantro, Salsa, Sour Cream, Avocado, Black Beans, etc.

Ingredients
  • 1/2 bag of frozen tater tots (4 servings)
  • Olive oil
  • 1 medium onion, diced
  • 2 peppers, diced
  • 1 lb. ground turkey, chicken, or beef
  • Salt and pepper
  • 1 packet of taco seasoning mix
  • 2/3 - 3/4  c. water
  • Toppings: Cheese, diced tomatoes, scallions, cilantro, salsa, avocado, sour cream, black beans, etc.
Instructions
  1. Preheat the oven to 425 degrees. (follow package directions) Place the tater tots in a single-layer on a baking sheet. Bake for 20-25 minutes.
  2. In a large skillet with 1 Tbsp. of olive oil, sauté the onions and peppers for 5-6  minutes over medium-high heat. Then, add the ground meat. Continue to cook until meat is browned. Season with salt and pepper. Next, add the seasoning mix and water. Stir until well combined. Cook for an additional 3-4 minutes.
  3. Top the tater tots with the meat and veggie mixture. Then, sprinkle with cheese. Return to the oven for a few minutes until cheese is melted. Finally, top with your favorite nacho fixins'.
