Nothing says warm, cozy fall weekend quite like a stack of fluffy waffles! In the fall, I'll take mine with pumpkin. Making homemade waffles may seem like a bit of a chore, but they're actually super simple and take little time to prepare.

The toughest part is getting out and cleaning your waffle iron. That alone could be reason enough to stick with pancakes (which are also delicious!) Luckily, I found removable waffle plates for my panini press. And, they can go in the dishwasher for a really easy clean-up!

You could also make a REALLY big batch and enjoy throughout the week! Or freeze to enjoy all winter long!

Waffle Iron Tips

  • Don't over mix the batter
  • Preheat the waffle iron
  • Spray liberally with nonstick cooking spray
  • Try not to peek!

Can I make gluten free waffles dairy-free?

Absolutely. I often use almond or oat milk. You can also use vegan butter instead of real butter.

 

Why are my waffles sticking?

  • Before cooking, spray the waffle iron liberally with nonstick cooking spray.
  • If it says nonstick, still spray liberally with nonstick cooking spray.
  • It’s possible the waffles have not finished cooking yet.

Ingredients
  • 1 Tbsp. butter, melted
  • 2 Tbsp. brown sugar
  • 1/2 tsp. vanilla
  • 1/4 c. pumpkin
  • 3/4 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 c. milk
  • 1 egg
  • 1 c. gluten free flour blend (I used oat and almond flour)
Instructions
  1. In a medium bowl or large measuring cup, whisk all of the ingredients. If needed, add a little more milk until mixture is pourable, but a little thicker than pancake batter. Heat a waffle iron according to directions. Next, spray with cooking spray and cook according to waffle iron directions.
