Gluten Free Pumpkin Waffles

With whole grains and that pumpkin-spiced flavor we love, these gluten free pumpkin waffles make the perfect fall breakfast!

Ingredients

  • 1 Tbsp. butter, melted
  • 2 Tbsp. brown sugar
  • 1/2 tsp. vanilla
  • 1/4 c. pumpkin
  • 3/4 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 c. milk
  • 1 egg
  • 1 c. gluten free flour blend (I used oat and almond flour)

Instructions

  1. In a medium bowl or large measuring cup, whisk all of the ingredients. If needed, add a little more milk until mixture is pourable, but a little thicker than pancake batter. Heat a waffle iron according to directions. Next, spray with cooking spray and cook according to waffle iron directions.
