Gluten Free Fettuccine Alfredo

With only 3 ingredients and 10 minutes, this gluten free fettuccine Alfredo makes the perfect carby side dish! Pour the sauce over veggies for a low carb version.

Creamy and decadent, Alfredo is actually super simple to prepare! You only need 3 basic ingredients, plus black pepper. No need to settle for a bottled version. Simply melt some butter and stir in heavy cream. Let simmer for a few minutes on the stove. Then, grate in fresh Parmesan cheese. Season with black pepper and you're done!

I used to LOVE fettuccine Alfredo! Unfortunately, it's not often gluten free and not very healthy. You can make it a bit healthier by substituting broth and flour in place of the cream. Alfredo is by no means low fat, but I really like the simplicity of the traditional ingredients. In order to make it healthier, I opted to use less cheese and serve with a lot of veggies! But don't worry, there is still a ton of flavor and creaminess!

Alfredo is great for low carb, gluten free, and even keto diets! It's the perfect sauce to pair with your favorite pasta or veggies!

What is Alfredo sauce?

Originating in Rome, fettuccine Alfredo features fresh fettuccine tossed with butter and Parmesan cheese. As the cheese melts, it thickens enough to create a sauce, which perfectly coats the pasta. Many of today's versions also feature cream. This dish is named after Alfredo Di Lelio, who featured the dish in his Rome restaurant in the mid-20th century.

  • Gluten Free Fettuccine Pasta
  • Butter
  • Cream
  • Parmesan Cheese
  • Black Pepper

How to Make Homemade Alfredo Sauce

  1. Boil the pasta according to package directions. I used a refrigerated gluten free pasta from Aldi, which took only about 3 minutes to boil.
  2. In a large skillet, melt the butter over low heat. Then, stir in the cream. Bring to a gentle boil and allow to simmer for 3-4 minutes.
  3. Next, freshly grate the Parmesan cheese over the skillet. Stir until the cheese is melted and sauce has thickened enough to coat the back of a spoon. Season with black pepper.
  4. Add the drained pasta to the skillet and stir until well coated. If desired, garnish with more grated Parmesan cheese.

Can I freeze Alfredo sauce?

Sure, Alfredo sauce can be frozen for up to 3 months. Simply thaw in the fridge overnight prior to using.
