  1. In a large mixing bowl, blend the shredded cheese, gluten free flour, salt, garlic powder, and butter with a fork or pastry blender. Then, add 1 Tbsp. of water at a time, until a dough is formed. Split the dough into two pieces. Next, wrap and refrigerate for at least 30 minutes.
  2. Preheat the oven to 375 degrees.
  3. Remove the dough from the fridge and allow to sit at room temp for a few minutes. Then, use a rolling pin to roll the dough between two sheets of parchment paper. You want to create a thin, rectangular shape. Use a pizza cutter or a knife to cut into squares. Next, create a small hole in the center of each square.
  4. Place squares of dough on a parchment lined baking sheet. Sprinkle with salt. Finally, bake for 14-16 minutes.

What is aged cheddar?

On average, cheddar cheese is aged for 12-18 months. Mild cheddar is aged for only about 2-3 months. The longer the cheese has aged, the sharper the flavor.

Storage

Store in an airtight container for up to 1 week. The dough can be refrigerated before baking up to 2 days. Dough can also be frozen for up to 2 months.
