With peanut butter and chocolate, this gluten free air fryer cookie makes the perfect, much-needed dessert when you've had one of those days!

We've all been there. Your boyfriend said he just doesn't see this going anywhere- in a text. The boss arrived early the ONE day that your son was sick and you showed up a few minutes late. You stepped in you-know-what on the living room carpet in your new white shoes. Maybe you've just had a terrible day, week, month, or season... Or maybe someone who you've been dating for a few months decides they're just "not ready" to be in a relationship. Awesome. I mean, I'm just spit-balling here...

And listen, I have had food "issues" my entire life. Yes, eating your feelings is never the correct answer. So, while I do believe that drowning your sorrows in a tub of Ben & Jerry's is not great...sometimes I think you just need a giant cookie filled with ooey, gooey chocolate. And if you are satisfied after two bites, then I strongly encourage you to save the rest, throw it away, or share with a friend. And no, this is not a permanent solution or something to do every time life knocks you down. But, life is short and sometimes things should just be fun and delicious!

You could keep cookie dough in the fridge, on stand-by, for when these situations arise; but, who needs that temptation??? This cookie can be made, from scratch, in just 10 minutes using simple ingredients. It's gooey, sweet, and delicious! But, it's also not loaded with junk. Plus, there's no egg, so you could even eat it raw! (Unless you're concerned with eating raw flour...)

Ingredients for Air Fryer Break-Up Cookie

  • Peanut Butter
  • Butter
  • Brown Sugar
  • Baking Soda
  • Gluten Free Flour: I used oat, almond, and tapioca flour.
  • Mini Chocolate Chips

Giant Air Fryer Chocolate Chip Cookie

Can I use my air fryer for cookies? 

Absolutely! But, not every cookie dough will work well. For best results, lower the temperature by about 25 degrees from your typical oven setting. Also, keep an eye on the cookies and realize they may not take very long, based on size. My cookie was large and took about 5-6 minutes to bake. The dough was thicker, so I patted it down and did not have too much spreading.

Can you use aluminum foil in an air fryer for cookies?

Yes, I used aluminum foil. Just be sure that not all of the holes in the basket are covered. You can also remove the basket and bake cookies on the bottom of the air fryer drawer.

Ingredients
  • 1 Tbsp. peanut butter
  • 1 Tbsp. butter
  • 1 Tbsp. brown sugar
  • 1/8 tsp. baking soda
  • 3 Tbsp. gluten free flour (I used oat, almond, and tapioca)
  • 1 Tbsp. mini chocolate chips
Instructions
  1. In a small bowl, heat the peanut butter and butter for 7-10 seconds. Then, stir until smooth and melted. Next, stir in the brown sugar, baking soda, and flour. Roll into a ball and Place on a small piece of aluminum foil.
  2. Set the air fryer to 350 degrees. Cook for 5-6 minutes, until golden brown. (Depending upon how warm the peanut butter and butter were, the cookie may spread a bit.) Eat right away with a fork or allow to cool for a few minutes.
