Crustless Holiday Quiche

With just 5 ingredients, crustless holiday quiche will make a delightful & healthy addition to your brunch table!

The holiday are here! Time to bake those cakes, pies, and cookies, and pretend that calories don't count. Except...we all know they do.

I am all for enjoying your food, especially when it comes to sharing with family and friends. And Mom's French toast casserole or Aunt Frida's prize-winning pecan pie may be worth it. But, there are many times when we get caught up in celebrations...and eat WAY too many things. Like, ALL the things. And then we have some regrets. Did we really need that store-bought chocolate chip cookie, apple pie, and a slice of chocolate cake?!? Probably not. Do we even like that weird bread-casserole-thing Aunt June always brings? Not really.

So, enjoy Grandma's freshly-baked cinnamon rolls, but maybe consider pairing it with a lighter option that is full of protein. Plus, it's nice to have a variety of options. Some healthy and some not-so-healthy.

For a holiday brunch, quiche is a terrific option! Crustless is even simpler, healthier, and naturally gluten free. But, it's still kind of fancy and BIG on flavor.

Classic quiche is baked with a pie crust. Then topped with an egg, heavy cream, and cheese mixture. There are a lot of possible choices, but usually quiche is very rich....and delicious.

My version is a bit lightened up- I've used eggs, plus some extra egg whites, milk (instead of cream), veggies, and of course some cheese. But, it's not drowning or anything. To make it festive for the holidays, simply add some red and green veggies!

What is the difference between a quiche and a frittata?

Both dishes are very similar. Frittatas are cooked on the stove first, before being placed in the oven. Quiche is cooked solely in the oven and involves cream or milk. Without the crust, a quiche is basically a frittata with some milk or cream added.

Is quiche healthy??

Quiche can be healthy, but it all depends on how it's made. Crustless quiche takes away the carbs and buttery pie crust. Though traditionally made with heavy cream, milk is an easy substitute. Load up on some veggies and you have a healthy, high protein breakfast or lunch!

Ingredients
  • Olive oil
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • Salt and pepper
  • 6 eggs
  • 4 egg whites
  • 1/2 c. milk
  • 1/2 c. shredded cheese

Instructions
  1. Preheat the oven to 350 degrees.
  2. Optional Step: Sauté the diced peppers in 1 Tbsp. of olive oil over medium-high heat for 4-7 minutes. Season with salt and pepper.
  3. In a mixing bowl or large measuring cup, whisk the eggs, egg whites, and milk. Stir in the diced peppers and season with salt and pepper. Pour into a greased tart or pie baking dish.
  4. Bake for 40-45 minutes. Sprinkle with the cheese after about 20 minutes of baking.
