Ingredients

  • Olive oil
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • Salt and pepper
  • 6 eggs
  • 4 egg whites
  • 1/2 c. milk
  • 1/2 c. shredded cheese

Instructions

  1. Preheat the oven to 350 degrees.
  2. Optional Step: Sauté the diced peppers in 1 Tbsp. of olive oil over medium-high heat for 4-7 minutes. Season with salt and pepper.
  3. In a mixing bowl or large measuring cup, whisk the eggs, egg whites, and milk. Stir in the diced peppers and season with salt and pepper. Pour into a greased tart or pie baking dish.
  4. Bake for 40-45 minutes. Sprinkle with the cheese after about 20 minutes of baking.
