Buffalo Chicken Burger Recipe

Ingredients:

For the patties:

  • 1 - 1 ¼ lb. ground chicken
  • ¼ of a small onion, grated
  • 1-2 Tbsp. hot sauce (plus more for topping)
  • 1 Tbsp. butter, melted
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • Salt & pepper

For serving:

  • Toasted burger buns
  • Sliced Cheese
  • Lettuce, tomato, and red onion slices
  • Extra hot sauce
  • Crumbled blue cheese or ranch dressing (optional)

How to Make Buffalo Chicken Burgers:

  1. Mix the patties: In a bowl, combine ground chicken, hot sauce, melted butter, garlic powder, onion powder, salt, and pepper. Then, grate the onion directly over the ground chicken. Mix gently until just combined — don’t overwork it.
  2. Form patties: Shape into 4 evenly-sized patties. If the mixture is sticky, chill it for 10–15 minutes to help it firm up.
  3. Cook: Grill, pan-fry, or cook in a skillet over medium heat for 4–5 minutes per side, or until the internal temperature reaches 165°F.
  4. Toast the buns: Lightly toast the burger buns for extra texture and flavor.
  5. Assemble: Spread blue cheese or ranch on the bottom bun, add the patty, drizzle with more hot sauce, then layer on lettuce, tomato, and onion. Top with crumbled blue cheese if you’re feeling bold.

Why is it called Buffalo sauce?

It comes from Buffalo, New York– where Buffalo wings were invented. Teresa Bellissimo deep-fried some leftover chicken wings and dipped them in a sauce made from hot sauce, butter, and vinegar. The wings quickly became a hit! Today, Buffalo sauce typically consists of those same 3 ingredients- heat, a fat, and an acid. When I make Buffalo sauce, I like to use hot sauce, butter, and lime juice.
