Ingredients
- 1 medium banana, mashed
- 1 Tbsp. butter, melted
- 1 Tbsp. milk or cream (can use dairy free)
- 1 egg
- 1 Tbsp. maple syrup or sugar (I used a monk fruit version)
- 1/2 tsp. vanilla
- 1 scoop protein powder
- 2 Tbsp. gluten free flour (I used oat flour and almond)
- 1/4 tsp. baking soda
- 1/8 tsp. cinnamon
- Chocolate Chips
- Nonstick cooking spray
Instructions
- In a medium bowl, mash the banana with a fork. Then, add the butter, milk, egg, maple syrup, vanilla, protein powder, gluten free flour, baking soda, and cinnamon. Mix with a fork, whisk, or spoon. Next, stir in the chocolate chips.
- Spray a medium to large-size coffee mug with nonstick cooking spray. Then, pour in the batter. If desired, top with additional chocolate chips.
- Microwave for 1 minute and 35 seconds up to 2 minutes. Let sit for one minute before enjoying.
