So- grab zucchini, tomato sauce, cheese, and your favorite pizza toppings. So simple!

And, once it's covered in melty cheese, no one will pay attention to the green stuff on the bottom! With a mild flavor, zucchini is a great veggie to introduce to kids and picky adults.

  • Zucchini
  • Tomato Sauce
  • Mozzarella Cheese
  • Salt and Pepper
  • Toppings: pepperoni, oregano, basil, etc.

How Long to Cook Zucchini Pizza Bites

Zucchini can be eaten raw and will cook very quickly. I recommend cooking for 5-8 minutes. You want it to be a little tender, but still have a bit of crunch. Zucchini also has a lot of water, so overcooking and reheating in the microwave will lead to a soggy crust.

Ingredients
  • 1 medium zucchini, sliced (about 15-20)
  • Salt and pepper
  • 1/3 c. tomato sauce
  • 1/2 - 3/4 c. mozzarella cheese, shredded
  • Optional: pepperoni, oregano, basil, etc.
Instructions
  1. Preheat the oven to 400 degrees.
  2. Place zucchini on a lined baking sheet and sprinkle with salt and pepper. Then, top with tomato sauce, cheese, and additional toppings. Bake for 6-8 minutes, until cheese is melted.
