Sweet Potato Nacho Fries

For an easy appetizer, snack, or even dinner- check out these sweet potato nacho fries! Oh, and while still crazy delicious, they are made with mostly wholesome ingredients- like ground turkey, sautéed veggies, salsa, and a sprinkling of cheese!

How about some sweet potato fries loaded with your nacho favorites?!?!!!!

I've never considered nachos to be healthy. Loaded with sour cream, avocado, and sometimes swimming in that creamy jalapeno cheese... So yummy as a kid, but the older I get, the less that orange goo even sounds appetizing... Luckily, we can easily use some smart ingredients to bump up the nutrition, without sacrificing flavor. These could happily sit on my plate any day of the week!

First, I recommend looking for sweet potato fries with minimal ingredients, especially the crazy ones you can't pronounce. You could also make your own from fresh sweet potatoes. Next, I layered some lean protein- ground turkey, seasoned with taco seasoning. Ground chicken or grass-fed beef are also great options. I prefer to add sautéed onions and peppers in with the meat, but you could layer veggies on top. Seriously- really pile those veggies on there! There are so many great flavors- they will beautifully blend in! Finally, add some shredded cheese, and a few of your favorite extras- salsa, avocado, beans, cilantro, scallions, and/or a dollop of sour cream.

Fun nacho fries, without the guilt?!? Yes, please.

  • Frozen Sweet Potato Fries
  • Ground Meat- turkey, chicken, beef
  • Onion
  • Bell Peppers
  • Taco Seasoning
  • Toppings- salsa, diced tomatoes, avocado, sour cream, beans, corn, cheese, scallions, cilantro, etc.

Are sweet potato fries healthier than potato fries???

The short answer is yes. Sweet potatoes are higher in calories and carbs; however, they are also more nutrient dense. The biggies are more fiber and Vitamin A. In general, deep frying is not the healthiest cooking method, as it uses a lot of oil. For a better choice, look for a high-quality frozen variety or bake your own.

Why are my sweet potato fries not crispy?

In in air fryer, make sure your temperature is set hot enough and DO NOT overcrowd the basket. The same is true for baking in the oven- do not crowd the baking sheet. This can lead to food essentially steaming. Give the fries some space!

Ingredients
  • Olive oil
  • 1 large onion, diced
  • 2 bell peppers, diced
  • Salt and pepper
  • 1 lb. ground turkey, chicken, or beef
  • 1 - 2 Tbsp. taco seasoning mix
  • frozen sweet potato fries
  • Optional: cheese, salsa, avocado, sour cream, diced tomatoes, corn, beans, scallions, cilantro, etc.
Instructions
  1. In a large skillet, heat 2 Tbsp. of olive oil over medium heat. Sauté the onions and peppers for 4-5 minutes. Then, add the ground turkey and season with salt and pepper. Chop up the meat and cook until browned. Next, add the taco seasoning mix and stir until combined. (Can also make ahead and store in the fridge.)
  2. Once the meat is beginning to cook, add the sweet potato fries to the air fryer. Set at 400 degrees and cook for 9-12 minutes, shaking basket every few minutes.
  3. Top waffle fries with sautéed taco mixture and additional toppings.
