S'mores Sweet Potato Bites

For an appetizer, sweet side, dessert, or game-day treat- these s'mores sweet potato bites are a crowd-pleaser!

Move over Grandma's sweet potato casserole- time for a brand new take! Actually, my Grandma's were never known for sweet potato casserole...maybe I just don't know what I am missing. But, these are light, sweet, fun, and take a lot less time to prepare!

Much like their fellow orange neighbors- carrots, sweet potatoes can go savory or sweet. They are terrific roasted, mashed, baked, French-fried, planked, bruschetta-ed, or in a breakfast hash! They can also be turned into cake, cookies, and pie!

Small appetizers and mini desserts are often my favorite to create. They tend to be much more fun to eat, and take less time to prepare. Plus, you get to come back for seconds without the guilt! Most sweet potato casseroles take at least an hour to prepare. These little guys are super cute and only take 20 minutes from start to finish!

  • Sweet Potatoes
  • Coconut Oil
  • Sugar
  • Mini Marshmallows
  • Chocolate Chips
  • GF Graham Crackers

Are yams and sweet potatoes the same???

No, they are not the exact same. Sweet potatoes have orange-red skin, orange flesh, and are sweet. Yams have brown skin, white flesh, and a neutral flavor. It’s rare to find yams in American grocery stores. Part of the confusion comes from sweet potatoes often being labeled as yams in many grocery stores and premade products. S'mores Sweet Potato Bites

For an appetizer, sweet side, dessert, or game-day treat- these s'mores sweet potato bites are a crowd-pleaser!

Ingredients
  • 2 sweet potatoes
  • Coconut oil
  • 1 Tbsp. sugar
  • 1/3 c. chocolate chips
  • 1/2 c. mini marshmallows
  • 1 gluten free graham cracker sheet, crushed
Instructions
  • Set the oven to high broil and leave the door cracked.
  • Slice the sweet potatoes about 1/4 inch thick (about 6-8 slices per potato.) Brush with melted coconut oil. Then, high broil for about 6 minutes, until beginning to brown and fork tender. Remove from the oven and sprinkle with sugar.
  • Set oven to low broil. Next, top each potato slice with 4-5 chocolate chips and 4-5 mini marshmallows. Sprinkle with crushed graham crackers. Then, low broil for 1-3 minutes, until marshmallows are browned. Best served warm.
