Remake: Sally's No Bake Chocolate Peanut Butter Bars (Gluten Free)

For a simple, yet decadent sweet treat, these Sally's no bake chocolate peanut butter bars are now gluten free and made with a lot less sugar!

Is there anything that goes together better in this world than chocolate and peanut butter?!?

Especially rich dark chocolate with creamy, salty peanut butter?

I think not.

I mean...the Reese's Peanut Butter Cup has been around for almost 100 years for a reason!

For these peanut butter bars a creamy layer of peanut butter, butter, and gluten free graham crackers is topped with velvety-smooth chocolate. Yum! Plus, they are so simple to make- there's really no excuse not to!

I bet these will quickly become a new family favorite! Perfect for the holidays or a random Sunday afternoon!

So, I began with Sally's No Bake Chocolate Peanut Butter Bars and made a few tweaks of my own. Her version called for 2 cups of powdered sugar. Yowza- that's a lot, especially considering graham crackers are already sweet! I only used 1/4 cup of powdered sugar. I also added some Greek yogurt for more protein and to add a little more volume, since I removed so much of the sugar.

These no-bake peanut butter bars make the perfect sweet bite! For ease of cutting, I recommend freezing for at least 30 minutes. Actually, I recommend storing them in the freezer!

How to Store No Bake Peanut Butter Bars

Store in an airtight container in the fridge or freezer. These will keep for up to 1 week in the fridge and at least 2 weeks in the freezer!

Ingredients
  • 1 c. gluten free graham crackers, crushed
  • 1 c. creamy peanut butter
  • 4 Tbsp. butter, melted
  • 1/4 c. powdered sugar
  • 1/2 c. Greek yogurt
  • 2 Tbsp. creamy peanut butter
  • 1 c. chocolate chips
Instructions
  • Use a small food processor or a Ziploc bag and a heavy object to crush the graham crackers.
  • In a medium mixing bowl, beat the peanut butter, butter, graham crackers, and powdered sugar. Then, beat in the Greek yogurt. Spread into an even layer in an 8x8 or 9x9 baking dish, lined with parchment paper.
  • In a microwave-safe dish, heat the chocolate chips and peanut butter for 25-second increments, until melted. Stir well. Pour over the peanut butter layer. Then, use an offset spatula, knife, or small spoon to spread an even layer.
  • Refrigerate for at least 2 hours or place in the freezer.
