Fall is in the air! If that pumpkin-spiced latte isn't enough for you, then let's add some pumpkin to your morning oatmeal.

I love, love, LOVE baked oatmeal in the morning! Warm (if you want), hearty oats baked to perfection. Plus, very portable and easy to grab for those busy weekday mornings. Just a little baking on Sundays and you could be set for the week. Oh, and there are so many flavor options- you'll never get bored.

Pumpkin: Look for canned pumpkin puree, not pumpkin pie filling.

Chocolate Chips

Old-Fashioned or Rolled Oats: This healthy whole-grain provides both fiber and protein.

Maple Syrup: For a natural sweetness. I also add some brown sugar.

Brown Sugar

Eggs: These help to bind all of the ingredients together.

Flour: The secret to my mush-free baked oatmeal! Flour plus baking powder brings this dish closer to a cake/muffin texture.

Baking Powder

Milk: Both dairy and dairy free varieties work well.

Can you make baked oatmeal ahead of time?

Of course! That's the best part! I make a big batch on Sunday and enjoy during the week for breakfast or even a snack!

Ingredients
  • 2 Tbsp. coconut oil, melted
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1/2 c. pumpkin
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 tsp. pumpkin pie spice
  • 1/2 c. flour (I used oat flour)
  • 1 c. milk (I used almond milk)
  • 2 c. old-fashioned or rolled oats
  • 1/2 c. chocolate chips
Instructions
  1. Preheat the oven to 350 degrees. In a large mixing bowl, whisk the coconut oil, brown sugar, maple syrup, pumpkin, vanilla, and eggs. Continue to whisk in the baking powder, salt, pumpkin pie spice, and oat flour. Carefully mix in the milk. Then, stir in the oats and chocolate chips.
  2. Spoon mixture into a greased 9x13 baking dish or 12-14 lined muffin cups. Then, bake for 30-35 minutes.
