For a sweet and healthy snack any Girl Scout would love, try these Samoa protein bites! With chocolate, caramel, toasted coconut, oats, and cashews- they're irresistibly delicious!

When you're trying to be healthier, desserts are the first to go; but, as soon as you start to think "stay away," they quickly become the only thing you crave! Or maybe that's just me...

So, I need some sweet treats to give me all the dessert feels, without all of the sugar, fat, and calories.

Protein bites are fun and easy to make! They only take a few minutes to prepare and are stored in the fridge. PLUS, I can mix a few fun treats- like chocolate and caramel sauce- with more nutritious ingredients like oats, nuts, and dried fruits.

Honestly, I feel like I'm eating balls of cookie dough! Yes, please!

And, if you don't own a food processor- no worries! For some variations, you can simply stir ingredients together, refrigerate, then roll into balls. The hardest part will be stopping after 2...or 3.

To bump up the protein, you can also add your favorite protein powder. You may need to add extra water/liquid, depending upon the texture of the powder.

No Bake Protein Bite Ingredients

Old-Fashioned Oats: These babies have a starring role on my counter. One of my most-used ingredients. They provide fiber and protein, but are low in fat.

Cashews: Using nuts and/or nut butter bumps up the protein and gives a healthy dose of unsaturated fat.

Maple Syrup: This provides a natural sweetness. Sometimes I use brown sugar or dates.

With these 3 as the base, you can move in many different flavor directions!

To make these Samoa protein bites...

  1. Blend. Combine ingredients in a food processor.
  2. Roll. Use a spoon or cookie dough scoop, then roll mixture into balls. You can also press into a baking dish and slice into bars.
  3. Chill. Store in a covered container in the fridge.
  4. Enjoy! Eat right away or after chilling. Store in the fridge for up to 1 week.

Ingredients

Caramel Sauce

  • 1/2 c. brown sugar
  • 3 Tbsp. butter (or plant butter)
  • 2 Tbsp. cream (can be dairy free)

Toasted Coconut

  • 3/4 c. unsweetened coconut flakes

Protein Bites

  • 1 c. oats
  • 1 1/2 c. cashews
  • 1 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 1/4 c. chocolate chips
  • 1/4 c. water

Drizzle

  • 1/4 c. chocolate chips, melted
Instructions
  • Caramel Sauce: In a small saucepan, melt the brown sugar over low heat. Whisk in the butter. Once melted and smooth, remove from the heat and whisk in the cream. Set aside.
  • Toasted Coconut: In a small skillet, heat the coconut flakes over low heat. Stir until they are golden brown and fragrant.
  • In a food processor, blend the oats, cashews, maple syrup, vanilla, 1/4 cup of caramel sauce, 1/2 cup toasted coconut, and chocolate chips. Then, add the water and continue to blend. If sticky, allow to sit for a few minutes. Roll into balls.
  • In a small bowl, melt the chocolate chips in 20-second increments, stirring after each one. Then, pipe or drizzle over the protein bites. Sprinkle with remaining toasted coconut. Store in the fridge.
