No Bake Samoa Protein Bites

Ingredients
Caramel Sauce
- 1/2 c. brown sugar
- 3 Tbsp. butter (or plant butter)
- 2 Tbsp. cream (can be dairy free)
Toasted Coconut
- 3/4 c. unsweetened coconut flakes
Protein Bites
- 1 c. oats
- 1 1/2 c. cashews
- 1 Tbsp. maple syrup
- 1 tsp. vanilla
- 1/4 c. chocolate chips
- 1/4 c. water
Drizzle
- 1/4 c. chocolate chips, melted
Instructions
- Caramel Sauce: In a small saucepan, melt the brown sugar over low heat. Whisk in the butter. Once melted and smooth, remove from the heat and whisk in the cream. Set aside.
- Toasted Coconut: In a small skillet, heat the coconut flakes over low heat. Stir until they are golden brown and fragrant.
- In a food processor, blend the oats, cashews, maple syrup, vanilla, 1/4 cup of caramel sauce, 1/2 cup toasted coconut, and chocolate chips. Then, add the water and continue to blend. If sticky, allow to sit for a few minutes. Roll into balls.
- In a small bowl, melt the chocolate chips in 20-second increments, stirring after each one. Then, pipe or drizzle over the protein bites. Sprinkle with remaining toasted coconut. Store in the fridge.
