Keto-Friendly, Low-Carb Chicken Parmesan

This keto chicken Parmesan is quick, gluten free, low-carb, and simply delicious! With a flavorful almond flour & Parmesan coating, dinner can we ready in less than 30 minutes!

Chicken parmesan was one of the first dishes I ever ordered at an Italian restaurant. The fact that it’s often served as a pasta dish has always seemed a little strange to me. Or perhaps I just frequented Olive Garden a little too much… In addition to pasta, the chicken is usually fried and smothered in cheese. Which is great for flavor, but not so great for your waistline. This lightened-up, keto version uses a light almond flour & Parmesan cheese coating with a shallow fry to help lock-in that juiciness!

And, it might be difficult to capture in a photograph, but this chicken is so tender and full of flavor! I didn’t even opt for tomato sauce; it’s so delicious without it! But, feel free to add a low sugar/low carb one. You could also add some fresh mozzarella and chopped basil.

So, if you’re doing keto, trying to eat less carbohydrates, or you just love chicken- this simple chicken parmesan will not disappoint!

Ingredients in Low-Carb Chicken Parmesan

  • Chicken Tenderloin or Thinly-Sliced Breasts
  • Almond Flour
  • Olive Oil
  • Oregano
  • Parmesan Cheese
  • Basil and/or Parsley

What is Chicken Parmesan?

Chicken parmesan often consists of breaded chicken, which is pan fried. Then, it is topped with tomato sauce, mozzarella, and Parmesan cheese and baked until bubbly. It's usually served with spaghetti or a side salad. And topped with fresh basil and parsley is best!

Ingredients
  • 1 lb. chicken breast tenderloins or thinly butterflied strips
  • Salt and pepper
  • Olive oil
  • 1/4 c. almond flour
  • 2 Tbsp. Parmesan cheese
  • 1 tsp. oregano
  • Optional: chopped parsley, chopped basil, additional Parmesan cheese, low-carb tomato sauce, mozzarella cheese
Instructions
  • Season the chicken with salt and pepper. Then, brush with about 1 Tbsp. of olive oil.
  • Heat a large skillet over medium heat with about 2 Tbsp. of olive oil (enough to lightly coat the bottom of the pan.) In a small bowl, mix the almond flour, Parmesan, and oregano. Next, coat the chicken in the almond flour mixture. Brown each side for 4-8 minutes, until browned and chicken is cooked through. If you need to cook in more than one batch, add more olive oil to cover the bottom of the pan.
  • Garnish with chopped parsley and additional Parmesan.
