Ingredients
- 1 lb. chicken breast tenderloins or thinly butterflied strips
- Salt and pepper
- Olive oil
- 1/4 c. almond flour
- 2 Tbsp. Parmesan cheese
- 1 tsp. oregano
- Optional: chopped parsley, chopped basil, additional Parmesan cheese, low-carb tomato sauce, mozzarella cheese
Instructions
- Season the chicken with salt and pepper. Then, brush with about 1 Tbsp. of olive oil.
- Heat a large skillet over medium heat with about 2 Tbsp. of olive oil (enough to lightly coat the bottom of the pan.) In a small bowl, mix the almond flour, Parmesan, and oregano. Next, coat the chicken in the almond flour mixture. Brown each side for 4-8 minutes, until browned and chicken is cooked through. If you need to cook in more than one batch, add more olive oil to cover the bottom of the pan.
- Garnish with chopped parsley and additional Parmesan.
