Gluten Free PB Cheesecake Brownies

What makes gluten free cheesecake brownies even better?!? Peanut butter, of course. These gluten free brownies feature peanut butter on the inside and the outside!

Cakes and chocolate chip cookies are terrific. But, nothing can replace a dark chocolatey, gooey, sweet brownie. Trust me. I've looked.

In the world of gluten free baking, brownies are one of my favorites! Why?! Because, they don't require a lot of flour. You can make an entire pan of brownies with as little as 1/2 a cup of flour. That's it!

For me, it's a balance between creating an enjoyable dessert and finding ways to take away at least a bit of the bad stuff. Traditional brownie recipes can we made with multiple cups of sugar, which still blows my mind! No wonder they're so good! Luckily, we can create these sweet treats with much less and not feel like we're missing out.

Plus, I added some cream cheese and peanut butter for even more flavor!

Ingredients for Gluten Free PB Cheesecake Brownies

  • Coconut Oil (or butter)
  • Applesauce (or yogurt)
  • Brown Sugar
  • Maple Syrup
  • Dark Chocolate, melted
  • Eggs
  • Vanilla
  • Cocoa Powder
  • Gluten Free Flour Blend
  • Cream Cheese
  • Peanut Butter
  • Powdered Sugar

Gluten Free Baking Tips

  • Use a blend of flours for the best flavor and texture. 
  • GF flours can have a bit of a unique taste. White rice, tapioca, and cassava are fairly neutral. Oat flour is terrific, but can be more dense than others. Be ready to experiment to find your favorites.
  • Sometimes gluten free batter tastes different than the final baked product. Give it a chance.
  • If you're not ready to experiment, most prepackaged gluten free flour blends will work well.

Ingredients
  • 2 Tbsp. coconut oil, melted (or butter)
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1 oz. dark chocolate, melted (or chocolate chips, about 1/4 cup)
  • 1/2 c. applesauce
  • 2 eggs
  • 1/2 tsp. vanilla
  • 2 Tbsp. dark cocoa powder
  • 1/4 tsp. salt
  • 3/4 c. gluten free flour blend (I used almond and tapioca)

PB Cheesecake

  • 8 oz. light cream cheese, softened
  • 3 Tbsp. peanut butter
  • 1/4 c. powdered sugar

Peanut Butter Drizzle

  • 2 - 3 Tbsp. peanut butter
Instructions
  1. Preheat the oven to 350 degrees. In a medium mixing bowl, whisk the coconut oil, brown sugar, maple syrup, and melted dark chocolate. Then, whisk in the applesauce, eggs, vanilla, cocoa powder, salt, and flour.
  2. In another medium mixing bowl, beat the cream cheese until smooth. Next, heat the peanut butter for 15-25 seconds. Beat in with the cream cheese. Add the powdered sugar and continue beating. For a lighter texture, beat in 1-2 Tbsp. of milk or cream.
  3. Pour brownie batter into an 8x8 or 9x9, greased baking dish. Then, spoon or pipe cream cheese mixture over the batter. Use a knife to swirl. Bake for 18-22 minutes, until an inserted toothpick comes out mostly clean. Set aside to cool.
  4. Heat peanut butter for 10-15 seconds, until pourable, but not too thin. Drizzle or pipe over the cooled brownies. If desired, garnish with sprinkles. Store leftovers in the fridge.
