Gluten Free Cinnamon Banana Bread

With just one bowl and a few very ripe bananas- you can make this sweet and moist, gluten free cinnamon banana bread!

Give me a choice between banana bread and any other baked good....and I will choose the other thing!

Don't get me wrong- I love fresh bananas! I've just never been much for them in my desserts or making their way into other foods.

But, this banana bread has made me a convert! Seriously- I could not stop snacking!

Last week, I bought a bunch of bananas. Typically, I slice and freeze them to add to smoothies. Then...my week become CRAZY busy and those bananas just sat on the counter. So, it was either trash can or make some banana bread...

Now, I don't bake banana bread very often, but when I do- I happily pass it along to family and friends. Not this time. No way. Very little left my house.

Not only is this bread gluten free, but it has very little sugar, besides the bananas themselves. Then, I went with a cinnamon flavor, but peanut butter would be another terrific way to go.

Bet you can't eat just one and give the rest away...

Simple Banana Bread Ingredients

  • Ripe Bananas
  • Butter
  • Brown Sugar
  • Maple Syrup
  • Vanilla
  • Eggs
  • Cinnamon
  • Baking Soda & Powder
  • Gluten Free Flour Blend: For gluten free baking, a blend always works best. I used oat flour, almond flour, and tapioca flour.

Ingredients
  • 3 ripe bananas, mashed
  • 4 Tbsp. butter, softened (partially melted)
  • 1/4 c. brown sugar
  • 1 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 1 tsp. cinnamon
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 c. gluten free flour blend (I used oat, almond, and tapioca)

Glaze

  • 1/3 c. powdered sugar
  • 1 Tbsp. cream or milk
Instructions
  1. Preheat the oven to 350 degrees. In a large mixing bowl, mash the bananas with a fork. Then, whisk in the butter, brown sugar, maple syrup, vanilla, and eggs. Next, whisk in the cinnamon, baking powder, baking soda, and flour.
  2. Pour into one large, greased loaf pan or 8 mini, greased loaf pans. Bake for 50-60 minutes for large or 20-25 minutes for mini. An inserted toothpick should come out clean. Allow to cool.
  3. If desired, mix the powdered sugar and cream/milk until a thick glaze is formed. Drizzle over the banana bread.
