Gluten Free Chocolate Chip Cookie Biscuits

Somewhere between a biscuit, scone, and a cookie, these gluten free chocolate chip cookie biscuits make the perfect sweet treat for everyone- including those who are dairy-free, egg-free, vegan, or gluten-free!

I struggled with naming these cookies. Did I invent a new recipe that has never existed before?!? It's basically chocolate chip cookie dough, but they look more like a biscuit or scone. They're almost too difficult to describe. Soft, chewy, slightly sweet. A little drier than a cookie, but not as dry as a biscuit. Sweeter than a scone, but not as sweet as a cookie. When baked, they basically remain the same shape as when they went into the oven. So...chocolate chip cookie dough biscuit scones?!? Oh wait, introducing- gluten free chocolate chip cookie dough biscuit scones. Is that too long?

It all started when I couldn't eat egg yolks for a few weeks. When you can't have eggs...bye, bye baked goods! Like all of them! Well, ok...you can still have vegan desserts. Oh, but when you're also gluten free...tasty desserts can be even more difficult to find or make. Harder, but not impossible.

I came across one of my older cookie recipes and was surprised to see that it didn't use any eggs. At first, I wondered if that was a mistake. Most cookie recipes contain eggs. I decided to make a few recipe changes and give them a try. Voilà- this tasty treat was born!  

Now, I realized they weren't going to spread very much, but I did not know they were not going to budge at all. This recipe didn't work out quite the way I thought- they turned out even better!

Ingredients in Gluten Free Chocolate Chip Cookie Biscuits

  • Butter (can use vegan butter)
  • Brown Sugar (organic for vegan recipe)
  • Applesauce
  • Vanilla
  • Baking Powder
  • Gluten Free Flour Blend
  • Old-Fashioned or Rolled Oats
  • Chocolate Chips (dairy-free for vegan recipe)

What are chocolate chip cookie biscuits?

These soft little bites of heaven lie somewhere between a chocolate chip cookie and a biscuit or scone. They are soft, chewy, and sweet. Not as soft and gooey as a cookie. Not as dry as a biscuit. A fun, new hybrid you need to try!

 

Should I refrigerate gluten free cookie dough?

I always air on the side of...yes! It allows the butter to re-solidify. While baking, the butter is slower to melt, which limits how much the cookies spread. If you're in a rush, you don't have to refrigerate the dough before baking. Actually, then these cookies might actually spread a bit! (but I really like the rounded, cookie dough shape!)

Ingredients
  • 1 stick of butter, softened (1/2 cup)
  • 1/2 c. brown sugar
  • 1/2 c. applesauce
  • 1 tsp. vanilla
  • 1/2 tsp. baking powder
  • 1 1/2 c. gluten free flour blend
  • 3/4 c. old-fashioned or rolled oats
  • 1 c. chocolate chips
Instructions
  • In a large mixing bowl, cream the butter and brown sugar. Next, beat in the applesauce, vanilla, baking powder, and flour. Stir in the oats and chocolate chips. Cover and refrigerate dough for 30 minutes.
  • Preheat the oven to 350 degrees.
  • Scoop rounded spoonfuls of dough on greased or lined baking sheet. Bake for 12-15 minutes, until beginning to brown. Allow to cool on baking sheet before moving to cooling rack.
