Gluten Free Chipwich Baked Oatmeal Sandwiches

Inspired by an American summer classic, these Chipwich baked oatmeal sandwiches are gluten free and destined to become your new favorite variety!

Ok...so this recipe does not actually involve eating ice cream for breakfast- but it comes pretty darn close!

A Chipwich is an ice cream sandwich made with chocolate chip cookies. I used this fun, classic dessert as the inspiration behind my newest baked oatmeal. 

Now, this recipe comes with a bit of a disclaimer.

WARNING: One bite and you may never be able to enjoy any other oatmeal again.

Only joking! This is a fun summer oatmeal, but it is not intended to be treated as a super-healthy variety that should be eaten everyday. This is more of a special occasion or every-once-in-a-while type dish. Or maybe it can be used as a gateway into convincing your children that oatmeal is delicious!

And, if you've never enjoyed oatmeal- let this be your sign! Oatmeal is delicious! And, you are missing out!

Chipwich Baked Oatmeal with Strawberries

Ingredients in Gluten Free Chipwich Baked Oatmeal Sandwiches

  • Coconut Oil or Butter
  • Applesauce
  • Brown Sugar
  • Maple Syrup
  • Vanilla
  • Eggs
  • Flour (I used oat)
  • Baking Powder
  • Milk (can use dairy free)
  • Old-Fashioned or Rolled Oats
  • Mini Chocolate Chips
  • Cream Cheese
  • Powdered Sugar
  • Whipped Topping

Baked Oatmeal Tips

  • There are so many possible flavor combinations! Add some chopped peanuts, pecans, almonds, or peanut butter chips.
  • Adding a bit of oil (coconut or vegetable) provides some healthy fat. It also means there will be no sticking to paper cupcake liners.
  • Both applesauce AND yogurt work well. Choose your favorite or whatever you find in the pantry/fridge. I often use a coconut milk yogurt.
  • Gluten free as long as the oats are certified gluten free and you use gluten free flour. I use oat flour.
  • Serve right out of the oven or make ahead and store in the fridge. Baked oatmeal will last for 4-5 days. I prefer re-heating in the microwave for 30-45 seconds.

**If you want a thicker filling, you may need to double the recipe.

Ingredients
  • 2 Tbsp. coconut oil, melted
  • 1/2 c. unsweetened applesauce or Greek yogurt
  • 1/4 c. brown sugar
  • 2 Tbsp. maple syrup
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 c. oat flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. milk (can use dairy free)
  • 2 c. old-fashioned or rolled oats
  • 1/2 c. mini chocolate chips

Cream Cheese Filling

  • 4 oz. light cream cheese, softened
  • 2 Tbsp. milk or cream
  • 1/4 c. powdered sugar
  • 1/2 tsp. vanilla
  • 1/2 tub whipped topping (about 4 oz.)
  • Mini chocolate chips
Instructions
  1. Preheat the oven to 350 degrees. In a large mixing bowl, whisk the oil, applesauce/yogurt, brown sugar, and maple syrup. Next, whisk in the vanilla, eggs, flour, baking powder, and salt. Carefully stir in the milk. Then, fold in the oats and mini chocolate chips (can reserve some to place on top before baking.)
  2. Pour oat mixture into a greased brownie pan (with individual squares) or 12-14 lined muffin cups. Bake for 30-35 minutes.
  3. In a large mixing bowl, beat the cream cheese until smooth. Next, beat in the milk, vanilla, and powdered sugar. Fold in the whipped topping. Refrigerate until ready to assemble sandwiches.
  4. Slice each oatmeal muffin in half. Spread or pipe filling onto the bottom piece. If desired, decorate with additional mini chocolate chips. Store in the fridge.
  5. Not as cute, but you could also simply top each oatmeal muffin with the cream cheese mixture.
  6. Note: If you reheat, cream filling with melt.
