Happy Birthday to me!

My favorite cake, in case you're new here, is CARROT CAKE!!!! Love, love, LOVE!

Over the years, I have come up with Carrot Cake Protein Balls, Carrot Cake Baked Oatmeal, Carrot Cake Shortbread Cookies, and even Carrot Cake Cheesecake.

In honor of my birthday, I'm turning my favorite dessert into a waffle. Now, I can enjoy this yummy treat for breakfast and no one can say a thing! And, of course, there must be a sweetened cream cheese drizzle. Is there any other way?!?

Can I make gluten free waffles dairy-free?

Absolutely. I often use almond or oat milk. You can also use vegan butter instead of real butter.

Why are my waffles sticking?

  • Before cooking, spray the waffle iron liberally with nonstick cooking spray.
  • If it says nonstick, still spray liberally with nonstick cooking spray.
  • It's possible the waffles have not finished cooking yet.

What brands of waffles are gluten free?

Here are a few great brands. Remember, always check the box. Some of these companies are not gluten free exclusively.

  • Van's Gluten Free Original Waffles
  • Good & Gather Gluten Free Waffles
  • Nature's Path
  • Schar

Is carrot cake healthy???

In general, while it may have a few added nutrients, carrot cake is not a health food. There are ways to make it healthier, yet still sweetly satisfying! These gluten free carrot cake waffles are a healthier way to enjoy your favorite cake for breakfast!
