Once upon a time, a very smart lady invented brookies- basically a brownie mixed with a chocolate chip cookie! Imagine marbled layers of chewy brownies and buttery chocolate chip cookies- AKA dessert nirvana!

Now, you can bake this simple, but fun treat from basic pantry ingredients. Simply mix your favorite brownie batter- you can use Grandma's recipe or even a boxed mix. Then, sprinkle the brownie batter with your favorite chocolate chip cookie recipe! I have a really good gluten free one- The BEST Gluten Free Chocolate Chip Cookies.

It will take longer to bake than brownies or chocolate chip cookies alone, but the wait is totally worth it for this ultimate classic dessert!

And, brookies bars are perfect for serving a crowd!

Serve with a glass of milk or vanilla ice cream for best results.

Who invented Brookies?

Brookies were invented in Los Angeles by Jovon English. After a break-up, she couldn't decide between indulging in a cookie or a brownie, so she decided to combine the two! In 2014, she went on to launch Milk + Brookies in Los Angeles.

Easily Customize This Recipe

  • Baking Chips. Semi-sweet or dark chocolate chips toffee, mint, cinnamon, butterscotch, caramel, peanut butter, white chocolate
  • Nuts. Consider adding some nuts for crunch and saltiness. Pecans would be my top pick, but almonds, walnuts, peanuts, pistachios, and/or macadamia nuts would work well too.
  • M&Ms. For some fun color and a sweet crunch, add about 1 cup of regular or mini M&Ms.
  • Coconut. If you love coconut as much as me, sprinkle unsweetened flakes over the top before baking.
  • Sweet Syrup. For an extra sweet treat- drizzle with chocolate syrup, hot fudge, caramel, butterscotch, or marshmallow.
  • Sprinkles. Sprinkles make everything better!

Storing Gluten Free Brookies

These brownie cookie bars can be stored in an airtight container for up to one week. If you'd like a cool treat, you can even keep them in the fridge. Well-wrapped, Brookies will last in the freezer for up to three months.

Ingredients
  • 1 pkg. gluten free boxed brownie mix
  • 1/2 c. butter (1 stick)
  • 2 eggs
  • 2 Tbsp. water

GF Chocolate Chip Cookie Dough

  • 1/2 c. butter, softened
  • 1/2 c. brown sugar
  • 1/4 c. sugar
  • 1 tsp. vanilla
  • 1 egg + 1 egg yolk
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt (1/2 tsp. if you used unsalted butter)
  • 1 1/4 c. gluten free flour blend
  • 1 c. chocolate chips
Instructions
  • Preheat the oven to 350 degrees.
  • In a large mixing bowl, prepare the gluten free brownies according to the package directions. I whisked together the dry box mix with melted butter, eggs, and water. Then, scrape batter into a 9x9 greased baking dish.
  • In a large mixing bowl, cream the butter and sugar. Then, beat in the vanilla, egg, egg yolk, baking soda, and salt. Next, beat in the flour. Stir in the chocolate chips. Use a spoon, cookie scoop, or clean hands to drop chunks of cookie dough into the brownie batter.
  • Cover and bake for 20 minutes. Then, remove the cover and bake for an additional 20 minutes.
