Chicken Fajita Skillet

With just one pan and a few simple, yet flavorful ingredients, this chicken fajita skillet makes a terrific dinner any night of the week!

Every time I hear fajitas, I picture a sizzling, black skillet from Chilis. And, I don't think I've ever ordered them, not when bottomless chips and cheesy enchilada soup exist, but fajitas always look and smell amazing!

Originally, I set out to make a fajita pasta bake. But, that requires a lot more time and carbs. Instead, I decided to sauté some onions, peppers, and chicken. Then, add a bit of seasoning and be done.

Simple. Delicious. Low Carb. And ready in less than 30 minutes!

This skillet would be awesome inside taco shells or tortillas, but it's also perfect on its own.

  • Onion
  • Bell Peppers
  • Chicken
  • Olive oil
  • Fajita or Taco Seasoning Mix + Water
  • Optional: shredded cheese, scallions, cilantro

What is a fajita?

Fajita actually refers to the cut of meat that is traditionally used in this dish- carne asada or skirt steak. Today, fajitas are made with a variety of meats and even vegetarian. The most common staples include meat, grilled onions and peppers, and served on a flour or corn tortilla.

Ingredients
  • Olive oil
  • 1 medium onion, sliced
  • 3 bell peppers, sliced
  • Salt and pepper
  • 1 lb. cooked chicken, shredded or diced
  • 1 packet fajita or taco seasoning mix
  • 2/3 c. water
  • Optional: shredded cheese, scallions, cilantro
Instructions
  1. In a large skillet, heat 2 Tbsp. of olive oil over medium-high heat. Sauté the onion and peppers, seasoned with salt and pepper, for 5-9 minutes. Then, add the chicken to the skillet.
  2. In a small bowl, stir the fajita or taco seasoning mix with warm water. Next, pour over the chicken/veggies. Stir and cook for an additional 3-4 minutes. Garnish with cheese, scallions, and cilantro.
