Buffalo Chicken Casserole

Say good-bye to bland, boring chicken recipes! This Buffalo chicken casserole features a spicy cream sauce over chicken and sautéed veggies. You will want to make this easy weeknight meal on repeat! It’s also perfect as a game-day meal!

First, this sinful sauce is super simple to make! Simply melt and stir together cream cheese, shredded cheese, butter, hot sauce, lime juice, and a maybe a bit of brown sugar. It’s basically Buffalo sauce with cheese. And, this sauce is so flavorful it’s the perfect opportunity to pack in those veggies! Plus, I love to serve over spaghetti squash for even more fiber.

Second, this dish can be served straight from the skillet in 45 minutes or less. Or, you could into a baking dish and quickly reheat the next day.

How to Make Buffalo Chicken Casserole

  1. First, brown the chicken.
  2. Then, sauté the veggies.
  3. Next, make the sauce. In the skillet, melt cream cheese. Then, stir in the chicken broth, hot sauce, lime juice, butter, brown sugar, and about 1/2 cup of shredded cheese.
  4. Add the chicken back to the skillet. Then, top with shredded cheese and serve or pour into a baking dish and reheat the next day.

What is Buffalo Sauce?

Buffalo sauce combines hot sauce and a fat, usually butter. I also like to add lime juice and a bit of brown sugar to help balance out the flavors. With these 4 simple ingredients, you can make a delicious and creamy sauce that everyone will love!

Ingredients
  • Olive oil
  • 1 1/2 lbs. chicken, diced
  • 1 medium onion, diced
  • 3 bell peppers, diced
  • Salt and pepper
  • 8 oz. cream cheese
  • 1 Tbsp. butter
  • 1 c. chicken broth
  • 1/2 c. hot sauce
  • Juice of 1 lime
  • 2 Tbsp. brown sugar
  • 1 c. shredded cheese, divided
  • Spaghetti squash or rice

Instructions
  1. Heat a large skillet with 2 Tbsp. of olive oil. Then, add the chicken and cook until browned, about 8-9 minutes. Season with salt and pepper. Remove from the skillet and set aside.
  2. Next, add 1 tbsp. of olive oil to the skillet. Sauté the onions and peppers for 5-6 minutes. Season with salt and pepper.
  3. Preheat the oven to 350 degrees.
  4. Now, add the cream cheese to the skillet. Allow to melt and stir. Then, stir in the butter, chicken broth, hot sauce, lime juice, and brown sugar. Next, stir in about 1/2 cup of shredded cheese. Add chicken back to the skillet. Then, pour mixture into a greased baking dish and sprinkle with the remaining cheese.
  5. Bake for about 15 minutes. If cold, bake for 30-35 minutes.
