Air Fryer Cauliflower Nachos

Ingredients
- 1 head of cauliflower, chopped into small florets
- Olive oil
- Salt and pepper
- 1/2 bell pepper, diced
- 1/2 medium onion, diced
- 1/2 lb. ground turkey
- 1/2 packet taco seasoning (or 1/2 Tbsp.)
- Toppings: Salsa, sour cream, avocado, diced tomatoes, shredded lettuce, cheese, black beans, cilantro, green onions...
Instructions
- In a medium mixing bowl, toss the cauliflower with 1 Tbsp. of olive oil, salt, and pepper. Place in a single layer in the air fryer. Then, set to 375 degrees and cook for 10-15 minutes, shaking basket every 3-4 minutes.
- In a medium skillet, heat 1/2 Tbsp. of olive oil over medium heat. Sauté the peppers and onion for 4-5 minutes. Next, add the ground turkey and cook until browned. Season with salt and pepper. Then, add the taco seasoning mix (and water, if needed.)
- Top cauliflower with the meat/veggie mixture. Next, add your favorite toppings- tomatoes, salsa, beans, cilantro, cheese, etc. Serve and enjoy!
