Storing

This dish will last in the fridge for 3-4 days. It also freezes well for up to 3 months.

Should I dredge the chicken?

Dredging is when meat or vegetables are given a light coating with flour or another dry ingredient prior to cooking. While not absolutely necessary, I highly recommend. This thin coating will keep the chicken from drying out or becoming stuck to the pan. It just may become your new favorite way to cook chicken!

Like it even spicier?

  • Add red pepper flakes
  • Use more hot sauce
  • Cayenne pepper
  • Chili powder

Ingredients
  • Olive oil
  • 1 1/2 lbs. chicken
  • 1/4 c. almond flour
  • Salt and pepper
  • 2 bell peppers, diced
  • 2 medium zucchinis, diced
  • 1 pkg. microwavable rice

Hot Honey Sauce

  • 3 Tbsp. butter
  • 4 Tbsp. honey
  • 2 - 3 Tbsp. hot sauce

Instructions
  • In a large skillet, heat 2 Tbsp. of olive oil over medium heat. Then, combine the chicken, salt, pepper, and almond flour in a large bowl. Use clean hands or a spoon to mix well. Add the chicken to the skillet and cook until browned, about 8-10 minutes. Flip once after the bottom has browned. Remove and set aside.
  • In the same skillet, heat 1 Tbsp. of olive oil. Next, sauté the peppers over medium-high heat for 5-7 minutes. Season with salt and pepper. Remove and set aside. Then, sauté the zucchini, seasoned with salt and pepper, over medium-high heat for 7-8 minutes. You could also air fry the zucchini, if desired. Add the peppers back to the skillet and stir to combine.
  • Follow the package instructions to cook the package of rice in the microwave.
  • In a small saucepan, heat the butter until melted. Then, whisk in the honey and hot sauce.
  • In serving bowls, layer the rice, sautéed veggies, and chicken. Then, use a spoon to drizzle the hot honey sauce.
