This might sound strange, but the first time I ever had Chinese food was in college. I have mentioned this lack of a multicultural dining experience to my mom numerous times. She claims we must have ordered Chinese takeout a few times, but I do not recall ordering it even ONCE while growing up. So, cut to my 20-year-old self… My friend Ben recommended the orange chicken at Panda Express. Now, I was also not a huge fan of many vegetables, particularly broccoli. But, I was hungry and it came highly recommended. WOW! It was so good! I even enjoyed the broccoli!
Whenever I eat Chinese food, I am always reminded of a Gilmore Girls episode. You know, the one where Rory first goes to college and they order everything off the menu from a number of local restaurants. Because food is the best way to make new friends… Seriously, this is a secret dream of mine. I love trying something new, but I hate when I end up ordering something that I don’t like. Being adventurous is great, but a poor choice can ruin my entire evening! The ability to try a little bit of everything…ummmm, perfect Saturday night!
After receiving a new wok for Christmas (thanks, Santa!), I knew homemade chicken pad thai had to be my first dish! The only complaint about my standard takeout order is the lack of vegetables, so I “beefed” it up a bit. Hehe…see what I did there? I added onions, carrots, and peppers. Though I didn’t have my usual order nearby to compare, who cares…yum! Next time, I may just put the sauce on chicken and vegetables.
In full honesty, I think my noodles were slightly overcooked. You see…first, they were undercooked, upon following the package directions. So, I added more water and cooked them a bit more. Well, then they ended up a bit mushy. I think rinsing the rice noodles probably would have helped to get rid of some of the starch. Live and learn…luckily, the dish was still delicious!
