For a sweet, salty, and crunchy dish- this winter shaved Brussels sprout salad makes a healthy holiday side or a fun weekday lunch!

This shaved Brussels sprout salad has become my go-to winter salad! The colors are beautiful! Plus, this has the BEST toppings- bacon, walnuts, apples, grated Parmesan, and pomegranate seeds! Yum-my!!!

So, I can be a little picky when it comes to salads. Truly, I don't want to be...but, certain flavors and textures get me. And, salads often involve a lot of things I just do not like.

Honestly, I wish I LOVED all salads, but I've accepted that it just will never happen. Luckily, I have found a few salads I do enjoy. And, if I like a salad- you know it MUST be good!

When cooked correctly- I LOVE Brussels sprouts! They can be a little tricky to prepare. Steamed is just not a good look. And, when not cooked correctly- they can turn into a mushy, smelly mess. Sautéed or roasted are the ways to go! And, bacon and/or butter makes everything better! Brussels sprouts can also be eaten raw. They are crunchy, with a slightly bitter flavor. Personally, I wouldn't munch on these raw, but with dressing and toppings- the crisp, mostly mild flavor makes the perfect salad base!  

This salad makes a fun winter side dish or simply add more protein to turn this into a meal!

  • Fruit- pears, apples, dried cranberries, pomegranate seeds
  • Nuts- walnuts, pecans, almonds
  • Seeds- sunflower, pumpkin  
  • Dressing- balsamic vinaigrette, lemon & olive oil dressing
  • Other- onions, blue cheese, garlic

How to Shave Brussels Sprouts

There are four common methods for shaving Brussels sprouts. First, you need to wash and trim the sprouts. Then, pick a method and shred!

  • Buy already shaved- the fastest and easiest method!
  • Knife- takes a bit of time, but is very simple to do. Slice each sprout into 4-5 slices. Then, lay pieces flat on the cutting board and make 4-5 cuts to create long, thin pieces.
  • Food Processor- faster, but requires more clean-up. Using a shredding or grating attachment, feed sprouts into the processor.
  • Mandoline- hold the stem while moving the sprout back and forth over the mandoline.

How to Make Super Simple Almond Butter Dressing

This recipe only requires 3 ingredients- but it's so good!

  • Almond Butter
  • Coconut Aminos or Soy Sauce
  • Water

Whisk ingredients in a small bowl, until a pourable dressing is formed. Store dressing in the fridge.

 

What do raw Brussels sprouts taste like?

Similar to cabbage, raw sprouts are mild and crunchy, with a slightly bitter flavor. You can enjoy raw or lightly sauté in olive oil or bacon grease.

Ingredients
  • 2 lbs. Brussels sprouts, washed and trimmed
  • 3 - 4 Tbsp. bacon grease or olive oil
  • Salt and pepper
  • 2 large apples, sliced or diced
  • 4-6 slices of bacon, crumbled
  • 1 c. walnuts, chopped
  • 1/2 c. pomegranate seeds
  • 1 c. Parmesan flakes

Almond Butter Dressing

  • 4 Tbsp. almond butter
  • 1 Tbsp. coconut aminos or soy sauce
  • 4 Tbsp. water
Instructions
  • SHRED THE SPROUTS: Use a knife, food processor, or mandoline to shred the Brussels sprouts.
  • OPTIONAL STEP: In a large skillet, heat the bacon grease or olive oil over medium-high heat. Add the Brussels sprouts and sauté for 4-5 minutes. Season with salt and pepper. (Brussels sprouts can be eaten raw)
  • ALMOND BUTTER DRESSING: In a small bowl, whisk the almond butter, coconut aminos, and water until a pourable dressing is formed.
  • Add Brussels sprouts to individual bowls or plates. Top with apples, bacon, walnuts, pomegranate seeds, and Parmesan. Drizzle with the almond butter dressing.
  • Store leftovers (separately) in the fridge; but, enjoy quickly! Best when consumed within 2-3 days.
