If you love pizza and mashed potatoes- get ready for smashed potato pizza...your new favorite snack!

As a child, is there anything more delicious than pizza and mashed potatoes?? Anything?? I'll give you a few moments to think...

Both are classic comfort foods. At the top of many favorite lists- they have it all! And, now we're putting them together!

Years ago I created a mashed potato pizza crust. This involved mixing flour with mashed potatoes and spices. While delicious, it was difficult to make the crust thin enough to feel like true pizza crust. Plus, it took a lot of time to prepare. So, let's cut out the middle men and streamline the process. Get rid of the flour. Get rid of the mixing and rolling. Get rid of the gluten. Honestly, I'm not even sure exactly how I came up with the idea, but it was a moment of pure genius!

These smashed potato pizzas make the perfect healthy snack or lazy Friday night dinner when paired with a side salad.

Ingredients in Smashed Potato Pizza

  • Red or Yellow Steamable Potatoes
  • Tomato Sauce
  • Mozzarella 
  • Oregano
  • Toppings: Pepperoni, sausage, bacon, broccoli, mushrooms, black olives

Mashed Potatoes vs. Smashed Potatoes

Both dishes begin with those magical tubers. Mashed potatoes are created by beating boiled, peeled potatoes with an electric mixer. They are smooth, fluffy, and often lump-free. For smashed potatoes- a fork or potato masher is used to create partially smashed, chunks of potatoes. Here, the skins are almost always left on.

Ingredients
  • 1 1/2 lbs. small red or yellow steamable potatoes
  • 3/4 c. tomato sauce
  • 1 c. mozzarella cheese, shredded
  • 1 Tbsp. dried oregano
  • Optional toppings: pepperoni, sausage, bacon, peppers, mushrooms, broccoli, black olives, etc.
Instructions
  • Place bag of potatoes in the microwave and steam according to package directions (8-9 minutes on high.) Remove, cut bag open, and allow to cool slightly.
  • Set the oven to high broil.
  • On a baking sheet, place 3-4 potatoes next to each other and smash with a fork, creating one connected mass. Repeat this process 2 more times. Spoon about 1/4 cup of tomato sauce on each "pizza." Top with shredded cheese, oregano, and other desired toppings. Broil for 3-4 minutes, until cheese is browned and bubbly. Enjoy immediately and often!
