This BBQ chicken recipe is so simple. Just set it and forget it.

Well, maybe don’t do that. But, with just a few minutes of prep in the morning, you could come home to dinner ready and waiting! Start with some chicken breasts and a bottle of your favorite BBQ sauce.

Season. Layer. Cook. Shred. Stir.

And dinner is done. Perfect with a salad or served atop some potato buns.

Ingredients for Slow Cooker Pulled BBQ Chicken

Chicken breasts: This is your chance to use all white meat and still retain moisture and flavor!

BBQ sauce: Choose your favorite. Since this provides 95% of the flavor, choose a sauce that you enjoy! I like to use Stubb’s Original. Great flavor with no high fructose corn syrup and a lot less sugar. Hickory is great if you want a smoky flavor. Or honey for a sweeter sauce.

A lime: Using both the zest and juice, this will help to balance the sweetness from the sauce and the brown sugar.

Brown sugar: This gives just a bit of extra sweetness, but you can omit.

Butter: This makes the final sauce smoother, but it is not necessary.

Salt and pepper: And of course, always season your meat!

Can you overcook chicken in a slow cooker?

Yes, it is possible. Sticking with 3-4 hours on high or 6-7 hours on low should leave you with perfectly cooked chicken. You're looking for it to be easy to shred and have an internal temperature of 160F.

Ingredients
  • 3 - 3 1/2 lbs. chicken breasts
  • Salt and pepper
  • 2 c. BBQ sauce
  • Zest & juice of 1 lime
  • 2 Tbsp. brown sugar
  • Optional: Sriracha
  • 2 Tbsp. butter, cubed
Instructions
  • Season chicken with salt and pepper. Then, pour enough BBQ sauce to cover the bottom of the slow cooker. Stir in the lime zest, juice, brown sugar, and Sriracha (if desired.) Next, set 2-3 chicken breasts into the slow cooker. Then, cover with more BBQ sauce and the butter. Add the remaining chicken and cover with BBQ sauce. Cover and cook on high for 3-4 hours or low for 6-7 hours. Remove chicken and shred with two forks. Then, return to the slow cooker and stir well.
