Gluten Free Pizza Pasta Salad

This gluten free pasta salad turns your favorite pizza toppings into a light and refreshing dish, perfect for any summer picnic!

As a gluten-freer, pizza is one of the dishes I miss the most. Sure, there are a few decent alternatives, but truly, NOTHING beats the original. But, don't worry!

I'm not quite ready to give up. Yet...

In the meantime, I'll just keep using pizza as the inspiration for other dishes. Like this Pizza Salad, Spaghetti Squash Pizza Bowls, and even a Summer Fruit Pizza.

A few weeks ago, I decided to pizza-fy a summertime pasta salad. With pepperoni, ham, sliced peppers, fresh mozzarella, and basil- I'd say the mission was a HUGE success.

Gluten Free Pizza Pasta Salad Ingredients

  • Gluten Free Pasta
  • Ham & Pepperoni: So many possible add-ins. Go with your favorites.
  • Bell Peppers: Or broccoli, mushrooms, olives, squash...
  • Mozzarella: Does pizza even exist without mozzarella??? I think not...
  • Fresh Herbs: Basil is a must! Parsley and oregano are other terrific additions.
  • Tomato-Based Pasta Sauce: Choose a medium-high quality sauce for best flavor.

Pasta Salad Tips

  • Make ahead of time and let sit in the fridge for a bit. That's part of the beauty!
  • Mushy pasta is no bueno.
  • A light dressing is best. Even a little olive oil and lemon juice will work.
  • Consider an assortment of veggies. Think about flavors, colors, and textures.
  • Add even more flavor with fresh herbs.

What is the best temp for serving pasta salads?

Overall, room temperature is best. Though, a chilled salad on a hot day is very refreshing! But, too cold and it can be difficult to serve. Chilled, but out of the fridge for 10-15 minutes would be optimal. Also, be careful with mayonnaise-based dressings and don't leave sitting out for too long. No one wants to be that person.

Ingredients
  • 8 - 12 oz. gluten free pasta
  • 8 oz. ham, diced
  • 1/4 lb. pepperoni, diced
  • 2 bell peppers, sliced
  • 1 handful of fresh basil, chopped
  • Optional: 1 handful of fresh parsley, chopped
  • 3/4 - 1 c. pasta sauce
  • mini mozzarella balls
Instructions
  1. Cook pasta according to package directions.
  2. Meanwhile, slice and dice the ham, pepperoni, bell peppers, basil, and parsley. Drain the pasta, saving a little water, if desired. In a large mixing bowl, toss the pasta with the pasta sauce. Next, add the ham, pepperoni, and peppers. Add the mozzarella or reserve for people to add their own. Garnish with basil and parsley. Serve room temperature or cold.
  3. Store leftovers in the fridge.
