As a kid, summer afternoons were spent lounging by the pool. After lunch, we'd wait to hear that magical jingle. Then, we'd break open our piggy banks and run down the driveway before it was too late!

Actually, I didn't live in a neighborhood, so there was NEVER an ice cream truck...

Not that I'm bitter or anything.

But, I can just imagine kids experiencing the joy of choosing a cool and creamy treat on those hot summer afternoons. Sigh... From Mickey Mouse pops and Choco Tacos to ice cream sandwiches and Orange Creamsicles, there's something comforting about enjoying treats that were also enjoyed by my parents and even grandparents. Standing the test of time means it has to be good- right!?!

With that winning combination of orange and vanilla, Creamsicles have long been a family favorite! Sweet and creamy, with a touch of citrus. Now you can enjoy this summertime treat in cookie form!

Ooh...you could also serve with vanilla ice cream!

  • Orange Zest
  • Orange Juice
  • Cream
  • Vanilla
  • Egg
  • Gluten Free Flour Blend
  • White Chocolate Chips
  • Baking Soda
  • Salt

 

What is a creamsicle?

Made by Good Humor for almost 100 years, these frozen treats feature vanilla ice cream coated with orange sherbet. Both "Creamsicle" and "Popsicle" are brand names owned by Unilever. Orange was the original flavor; however, now there are many to choose from- raspberry, lime, grape, blueberry, and more!

 

What is the difference between a creamsicle and a dreamsicle???

Both have that magical combo of orange and vanilla. The Dreamsicle uses ice milk; while Creamsicle uses ice cream. Ice cream is made from milk and cream, while ice milk only uses milk. The biggest difference is creaminess. Dreamsicles never caught on quite the same as Creamsicles! Unilever now owns all frozen treats ending in -sicle.

Ingredients
  • 1 stick of butter, softened
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • Zest of 1/2 orange
  • 2 Tbsp. orange juice
  • 1 Tbsp. cream or coffee creamer
  • 1 egg
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 3/4 c. gluten free flour blend
  • 1/2 - 1 c. white chocolate chips
Instructions
  • In a large mixing bowl, cream the butter until smooth. Then, beat in the brown sugar, vanilla, orange zest, orange juice, cream, and egg. Next, beat in the baking soda, salt, and flour. Fold in the white chocolate chips. Cover and refrigerate dough for 20 minutes.
  • Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper. Then, use a cookie scoop to scoop the cookie dough out into balls, placing them 2 inches apart on the baking sheet. Bake for 8-11 minutes, until the edges are beginning to brown. Allow to cool on tray before moving.
