Chocolate Chip Cookie Baked Oatmeal

With this chocolate chip cookie baked oatmeal, you can enjoy dessert for breakfast and feel good about it!

A few weeks ago, I tried to make chocolate chip cookie dough baked oatmeal. I even froze the mini bits of cookie dough...but oatmeal requires a bit too much baking time. So...they baked. When I made chocolate cupcakes with cookie dough, the freezing technique worked so well. I mean...I knew they would likely bake, but I still remained hopeful. And, I'd love to say the ones pushed down in the middle remained dough...but no. They did not. And even if they did, the cookie dough is the same color as the rest of the oatmeal, so no one can tell...but this oatmeal is still SO good! Best laid plans and all.

No worries! So, I just need to make one slight adjustment...

  • Butter
  • Brown Sugar
  • Maple Syrup
  • Vanilla
  • Eggs
  • Applesauce
  • Baking Powder
  • Flour
  • Milk
  • Old-Fashioned or Rolled Oats
  • Chocolate Chips
  • Optional: Protein Powder

Is baked oatmeal healthy?

Absolutely! With a base of heart-healthy, whole-grain oats, you can feel good about starting the day with baked oatmeal. Just watch the sugar and other ingredients added. Baked oatmeal can be a little fun, but still healthy!

 

Can you make baked oatmeal ahead of time?

Of course! That’s the best part! I make a big batch on Sunday and enjoy during the week for breakfast or even a snack!

Ingredients

Cookie Dough

  • 4 Tbsp. butter, softened
  • 2 Tbsp. brown sugar
  • 1 Tbsp. maple syrup
  • 1/2 tsp. vanilla
  • 1/2 c. flour
  • 2 Tbsp. mini chocolate chips

Oatmeal

  • 2 Tbsp. butter, melted
  • 1/2 c. applesauce
  • 1/2 c. brown sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. flour (I used oat)
  • 1 c. milk (can use dairy free)
  • 2 c. old-fashioned or rolled oats
  • 1/4 c. mini chocolate chips
Instructions
  • COOKIE DOUGH: In a medium mixing bowl, beat the butter and brown sugar until smooth. Then, beat in the maple syrup, vanilla, and flour. Stir in the chocolate chips. Roll into small balls. If desired, freeze at least one hour or overnight.
  • OATMEAL: Preheat the oven to 350 degrees. In a large mixing bowl, whisk the butter, applesauce, brown sugar, vanilla, eggs, baking powder, salt, and flour. Carefully whisk in the milk. Then, stir in the oats and mini chocolate chips. Next, pour into a greased 9x13 baking dish or 12 lined-muffin cups. Press cookie dough balls into the oatmeal. Bake for 30 minutes.
